Sour Cream Rhubarb Coffee Cake
Loved how simple this recipe was to make, but disappointed in the cake portion. I made this exactly as written, but I think the bake time is about 10 minutes too long for a 13 x 9 pan. I was busy and didn't check the cake as it was baking so it baked the 45 minutes. I most definitely will try this again (and update my results) but I think it would have been done at about the 35 minute mark. The batter is very thick when you put it in the pan and is a thin layer. Next time I'm going to bake in an 11 x 7 pan.

Microwave Corn on the Cob
It doesn't get much easier cooking corn on the cob then this recipe. I cooked 2 ears and it took exactly 5 minutes in my microwave. This works great when you only want 1 or 2 ears of corn.

Buttermilk Strawberry Shortcake
Recipe Group Selection: 19, May '12 ~ Oh my gosh, is this shortcake ever delicious! I usually make a shortcake similar to this, but not with the buttermilk. Really liked the texture the buttermilk added. I cut the recipe down to 3 shortcakes because I did not want leftovers. I used the heavy cream and course sugar crystals on top as I'm not sure what turbinado sugar is. It baked up nicely and was a soft and fluffy on the inside and golden brown and crunchy on the outside. I will make shortcake this way from now on as I usually always have buttermilk on hand. Really enjoyed this week's Recipe Group pick.
