This is the best lasagna ever! I follow the recipe pretty closely with only a few exceptions!
1. I use cottage cheese in place of ricotta and it is delicious! I am not a big fan of ricotta.
2. I reverse the quantity of ground beef and sausage. I use 1 pound of ground beef and 3/4 pound of sausage.
3. I do not boil the noodles--I just put them in a pitcher of hot water and let them get soft. I add a bit more water to the sauce as it is thick.
4. I split the recipe and we enjoy this for one meal and have one for the freezer. This recipe works well with one 8" x 8" pan and one slightly larger. Two 9" x 9" pans would be perfect but I don't have them.
This is worth the time and you can let the sauce simmer overnight on the stove top on the lowest setting. Everyone loves this recipe!
