About this Cook
I've been married for 29 years, have 2 grown kids and adorable grandson with another on the way. I didn't cook much as a child so it was kind of trial by fire when I got married. Luckily my husband survived and over the years I think I've improved a lot.
My favorite things to cook
I really love making things in the crock-pot and casseroles. Appetizers are fun also. Desserts I'm not the greatest at but still will make them occasionally. Getting better at pies every time I make them but prefer making crisps and cobblers with fresh berries.
My favorite family cooking traditions
Making a ton of cookies at Christmas time. Also making a lot of appetizers and snacky things on new years eve. We have a large extended family that really enjoys potlucks and family get togethers with food. On my moms side, we are Norwegian so we have lefse at Christmas. We don't have it the way normal people eat it (cinnamon and sugar) but we spread on butter, mayo then put slices of turkey, stuffing and cranberries and roll it up like a burrito. It is to die for!
My cooking triumphs
Finally being able to make fried chicken like my mother in law (kinda sorta). She makes the best and has been for years and years and although mine isn't quite as good, at least passes somewhat.
My cooking tragedies
When we were first married, I tried a recipe out on my husband. I thought it would be more healthy and good for us to eat fish but didn't have a clue how to make it. I found a recipe in one of my books called "Sweet and Sour Fish" where you took cubed fish, put a batter on it then served it with some kind of sweet and sour sauce. The result was horrid. My darling hubby tried so hard to eat it and tell me how good it was but really we both knew it was awful. I've never attempted fish cooked that way again.

Italian Peas
These were ok. Made as directed but wasn't very thrilled with the flavor even though we love onions and garlic. Probably would not make again.

Asparagus and Mushroom Frittata
Delicious and SO easy! I love recipes that are easily adaptable and in this one you can add what you like and take out what you don't. I didn't change it much except to add red onions to the sauteed veggies. Came out wonderful and looked impressive serving it right out of the pan. This one is a keeper.

Crispy Cucumbers and Tomatoes in Dill Vinaigrette
Yum! I used english cucumbers Android didn't peel them. It ended up a very pretty salad that is refreshing and light.
