Chocolate Zucchini Muffins

Super recipe! I substitute half the sugar with brown sugar, half the flour with whole wheat pastry flour, and add a tsp. each of cinnamon, allspice, cardamom and nutmeg to give it a little zing. VERY flavorful and moist results! This is a most requested recipe in my house and at work.

Pork Fried Quinoa

This was a hit at a dinner party I hosted. I substituted sesame seed oil for the vegetable oil, used low salt soy sauce, added bean sprouts, and left out the rice vinegar. This recipe is full of flavor, and the quinoa does a great job of performing as a platform for it all.

Dill Sauce

Served it with pork tenderloin that had been marinaded in olive oil, lite soy sauce, paprika, and chives. Divine! I think it will go great with chicken too and intend to try it soon. Don't be afraid to try this one on other meats.

Buttermilk Scones

Incredibly moist - almost cake like when baked in a scone pan. I used 2 tablespoons of baking powder and topped with cinnamon sugar. Warm with tea- delicious! Much easier than other scone recipes I've seen and the best rave reviews (and I've made a lot of scones). Think of these as cake-like biscuits that can easily go sweet or savory.

LOVED this recipe - I used butter instead of shortening, and I think the flavor was the better for it. I'm thinking of trying almond and vanilla flavoring in the future, but neither are really necessary. It was so easy to just stir up the batter and have it be ready the next day!
