Stuffed Shells IV

These were delicious... Next time we make them we will cut back a little on the spinach though - I felt like most of the shell that I had was spinach.

Simple White Cake

This was a great recipe to use for cupcakes for my daughter's birthday, the cake itself is incredibly moist. It's heavy, but not as heavy as a pound cake. Definitely tastes homemade and not like a box cake....

Chocolate Fudge Buttercream Frosting

This was AMAZING. I've never had so many people fighting over cleaning out the bowl of frosting when I was done. We used smuckers special recipe hot fudge. Note that the hot fudge is always much easier to measure out of the container when it's room temp...

Strawberry Cake from Scratch

I tried quite a few strawberry cake recipes before settling on this one. It's not too sweet, and not too bland either. I tried to puree the strawberries only slightly because the cake is it's best when you get a small chunk of berry in your bite on occassion. Definitely will be making these again.

Sandy's Chocolate Cake

I didn't try the frosting, however the cake itself was excellent AND easy. Like others have mentioned, the batter *is* really runny, but it bakes to be extremely moist and stays delicious for a couple of days. We used chocolate fudge buttercream on these for cupcakes - they baked for ~22 minutes.

Fourth of July Cut-Outs

I thought cutting the shapes out was giogn to be difficult (we actually made mickey heads). It really was pretty simple, and I was able to do it when they were still gooey enough that I was able to peice all the scraps back together to make sure I didn't have any leftovers. Definitely need to make sure you have a big bowl if you're going to go the microwave route though - I should have known the marshmallows would expand, just wasn't expecting them to expand QUITE as much as they did.

Shortbread Cookies II

These really are pretty good -- even if you dont' have butter. I've made a batch both ways now, the first time I had a craving for shortbread but no butter in the house so I took a shot in the dark and it wasn't bad at all! I prefer my shortbread thicker and crumbly than the recipe calls for. Didn't have a cookie press and simply formed it into one long log and put it in the deep freeze for an hour or so, sliced, stabbed with a fork a few times and baked on parchment paper.
