Refried Beans Without the Refry

Creamy Rice Pudding

We love rice in our house and this is a fantastic way to use it up! I also added freshly grated nutmeg and cinnamon to mine (1/4 tsp each) and used skim milk. While the rice and milk were cooking I warmed the reserved milk slightly and added the raisins to soak and plump up. Very good treat!

I like the finer cabbage texture so I used angel hair cabbage and I also used one bag (16oz) frozen corn defosted and extra liquid squeezed from the corn. Next time I'll use two bags of the angel hair cabbage (they are pretty small) and add 1/4 t. chipotle powder to it.

Spicy Sausage Pasta Alfredo

If I could give this more than 5 stars my whole family would. I thought about using chicken broth but hubby and I both agree that the wine adds a great layer to it but would still taste good with chicken broth if you aren't fond of wine. Make sure and give it enough time to reduce down. I cut baby portabellos in half so anyone not liking them could easily put them to the side.

We really like egg meals because they are quick and easy and kid friendly. I think that next time I'll crumble up the sausage instead and use more red bell pepper (kids favorite).

Johnsonville® Italian Sausage Stuffing

My husband says that the peppers and olives give it almost a supreme pizza taste. In our opinion it makes WAY more than 14 servings. Also we didn't have fresh herbs so I used dry herbs and halved the amounts called for. It went great with our Easter lunch. YUM!!

Bacon Ranch Chicken Skewers

Definitely make your chicken pieces at least 1 inch. We marinated ours over night and it turned out great. My kids loved the flavor but said the best part was the bacon, at least I know that the bacon taste isn't lost. Using thick cut was important for this. The onion pieces helped keep the bacon on. Thanks for the recipe.

Lime Chicken Soft Tacos

The lime juice and vinegar combination was very nice on the tacos. I added about 1/3 C chopped cilantro to the chicken when it was done cooking. Also I made a chipotle sour cream to with it. A few slices of avocado cooled the heat of the sour cream. Great Cinco De Mayo meal!

Vanilla Berry Parfaits

This recipe was a hit with young and well not as young in our house. I used vanilla Greek (fat free) yogurt, cinnamon graham crackers and added a drizzle of honey to each layer. The frozen mixed fruit had cherries in it and I think this was such a great addition. We added a dollop of sugar free cool whip to the top and grated fresh nutmeg on the top. I would definitely recommend adding the nutmeg to EACH layer as it adds something that makes this parfait PERFECT! Great recipe!

Mexican Rice I

This was very easy! I grew up thinking that Mexican rice was like macaroni and cheese with tomatoes ~ it just didn't sound appealing. When I had it at Mexican restaurants for some reason I always thought that it was SPANISH rice. After making this I won't hesitate to make/eat it again.

Oh wow!! This recipe is so gooey and indulgent it will satisfy almost any sweet tooth. For the sliced bread we only had whole grain and that didn't sound like a good match so we used 2 hotdog buns. Buttered the outsides and spread the peanut butter on both sides. This causes everything to stick well. Instead of mini marshmallows I used 4 of the large marshmallows and cut them in half. They fit perfectly in the buns. We cooked them in a saute pan until both sides were browned and crispy. The salty butter, crispy outside of the bread paired with the sweet melted layers of this sandwich made us really glad we waited until after the kids went to bed to make them. So simple yet so great!

Greek Salad with Spinach & Feta Chicken Sausage

Loved this light and tangy salad. I let everyone add the toppings as desired. Also I recommend slicing the olives or everyone will be fighting over the 6 olives. A great summer recipe and the sausage adds a great flavor to the salad.

This is a FANTASTIC dish. It is very quick and easy. You can make everything in one pan and it tastes great. I took this as a meal to a family that had recently adopted 2 girls and everyone LOVED it. The Tabasco was just the right amount that even my "heat sensitive" kids ate every bite and asked for the leftovers the next day.

Guinness® Corned Beef

My family loves this recipe. It is so moist and juicy. I do make this in the crock pot for about 5 hrs on low. I typically add 1/2 head of cabbage that is cut in quarters and separated about 1 hr before it's done cooking, otherwise you'll just have cabbage mush. Another thing is that the packaging companies seem to think one size fits all when it comes to the seasoning packet. So we looked at the seasoning packet and supplemented with what we had on hand to make sure it was flavorful.
