Easy to Remember Pie Crust

This is the same pie crust recipe that my mother passed to me and my sisters and she got it from way back to my great grandmother. I use butter flavored shortening for more flavor and just a pinch of salt. I use very cold water and drizzle it over the flour and butter to make sure I need the whole quarter cup. Very tasty and easy!

Sour Cream Apple Pie Deluxe

I made this with the plan of adding a couple different or other ingredients. I used scant measures of Splenda for my sugar and I used chopped pecans instead of walnuts (although walnuts are fine, I had pecans and really like them) and I added about 1/4 cup of tart dried cherries. They cut the sweetness quite a bit and made it one of the best pies every. Loved it!!!! I live the creamy texture and the time was just right. I must not have gotten the butter cut up enough and crumbly enough because some of the white topping mixture came out still white. Easy fix? Put thin pats of butter over the white areas while still hot. Took care of all of it!! This is my favorite apple pie!!!

Bread Pudding II

I have been looking for a good bread pudding recipe because I have never made it but my mom always did. This is the best and likely the easiest. I made it by using dried cherries instead of raisins and adding one very thinly sliced macintosh apple. WHAT a FLAVOR!!!! It is delicious. So simple and so good. Who would think old bread could taste so wonderful!!!!

Home-Style Scalloped Potatoes

Can't beat this recipe. It's so much better than the ones that use soup and remind me of the ones my mom used to make. Making the roux with 5 Tbl of butter and flour and 5 cups of flour is the correct ratio as long as you cook the roux long enough. I added more onions and lots of ham. I also precooked the potatoes but in the milk. I drained the milk off and mixed it with the flour mixture and stirred well and made sure it thickened slightly.Then I did the layers, starting with my ham, then potatoes, then the roux with the onions in it.Then the milk. Another layer of the same and topped it with ham and about a cup of shredded cheddar cheese. It was a hit. Of course, salting and peppering the roux to your taste is necessary to have a good product in the end.

Mama's Italian Wedding Soup

I just loved this soup! I did make changes but I know the basic taste is there. I just wanted to make the meat balls a bit healthier so I used ground turkey, I used blended whole oats and added some ground flaxseed to make my measurement correct for the breadcrumbs. I feel I saved some fat calories and added a touch of fiber. And since I used Acina de pepe I used about twice as much. You get a good number of small meatballs with this also, maybe 80 or so. Really the best I have have ever tasted. YUMMY!

Broiled Tilapia Parmesan

This is not only delicious, but it is so easy and fast. I just looked it up, printed it out, went out and turned on the broiler and within 10 minutes I had my meal. I added some green beans and some applesauce and voila! A delicious dinner. I love it!!!!!!
