Eggplant Parmesan II

YUMMY! I sweated the eggplant(cut, salt, and let sit until little beads of water form on slices) for 15 minutes, and made my own sauce. My husband who "hates" eggplant loved this. Use FRESH basil, and it is even more tasty.

Cashew Crusted Chicken

I am a vegetarian, but have the task of preparing meals with meat for my family when we get together. This is a common request. I use some of the apricot sauce on tofu with good success, and there are no complaints by the carnivores either. My picky hubby loves it.

Cuban Black Beans II

Yummy Yummy Yummy. I served these with a green salad and fried plantains, and everyone raved. I even served them to some friends who describe themselves as carnivores and they had no problem with a vegetarian meal once they tasted these beans. Both of them wanted the recipe. Thanks!

Carrot Spread Surprise

It is so easy. I use the food processer and do not have to dirty any dishes. This is my usual contribution to every party I attend, and no one ever complains. I always bring back one EMPTY dish!

Strawberry Spinach Salad I

wonderful. The strawberries at the store looked aweful, so I used raspberries and black berries and it was still to die for. It has become a frequent request of my little sisters boyfriend. I gave her credit for the salad (and I gave her the recipe). My hubby loves it too.

Angel Hair Pasta with Shrimp and Basil

I made this recipe with a friend and his partner when I was at their house one evening for dinner. Neither of them cook much, and they said I could come and cook at their house anytime. I added extra shrimp, and extra basil. Thanks for a great recipe.

Double Crust Bean Pie

I made this for my husband who is just becomming used to the idea that I do not intend to cook meat at home any more. I am a vegetarian who would cook meat for him. He loved this recipe and now requests it every week. This recipe is great to make ahead of time and put in the fridge to heat up for dinner when you don't feel like cooking.

Coconut Curry Tofu

This is so yummy! My husband loves it. I make it up ahead of time, without the cooking, keep it in the fridge and just throw it all into the pan at once for a super easy dinner after a long day. I also use chili oil rather than chili paste(It doesn't really matter, both are good).
