Tex-Mex Enchiladas

My husband doesn't normally like enchiladas, and I'm not a huge fan of the normal enchilada sauce...this was really different and good! I made the following changes: We don't like corn tortillas, so I used uncooked flour tortillas from Costco, and browned them in the skillet before filling. Left out the onions, added seasoned black beans and jack cheese to the inside of the enchiladas. Left the sauce the same, put a layer under the enchiladas and a layer on the top. Amazing!

Classic Dinner Rolls

THE BEST ROLL RECIPE...ever. :) Sometimes I'll substitute half of the flour with wheat flour, and they turn out wonderful.

Cream Puffs

My first attempt at cream puffs! they turned out very well, although you could definitely tell that it was pudding. I used 1 pkg vanilla and 1 pkg white chocolate, next time I'll do both white chocolate.

PHILADELPHIA Vanilla Mousse Cheesecake

This is seriously the best cheesecake I've ever had! My husband's grandmother made it for a family event and I was craving it, so I scoured Allrecipes.com and found it! I used graham cracker crust instead of the nilla wafers, and it was wonderful.

Baked Lemon-Basil Pasta

This was really good! I didn't quite have enough sour cream, so I added a little cream cheese to it. The sauce was delicious and stuck to the pasta. Made with colorful bow tie pasta and served with bread sticks! It was awesome.

Easy Morning Glory Muffins

This is a really good base recipe! If you don't have something, it's very simple to substitute something else. To try and make these even more healthy, I substituted wheat flour for half of the all-purpose, applesauce instead of eggs, and added 2 tbsp flaxseed and pretty much cut the oil in half or more (I have NO idea why you could possibly need a whole cup! It just grosses me out.) They almost tasted like oatmeal cookie muffins!

Thai Quivering Tenderloins

I used this as a marinade for chicken wings to go along with a Thai Chicken pizza I made. First of all, once they were BBQ'd, I honestly couldn't distinguish any of the ingredients that made up the marinade. However, they were probably the best chicken wings I've ever had! So full of flavor! We liked them so much that I made another batch to marinade over night. Will definitely be using this on many different meats.

Caramelized Chicken Wings

This recipe is AMAZING! Per previous reviews, I cut the sugar to 1/3 cup. Since we like things spicy, I also added some red pepper flakes and hot sauce to the recipe. The chicken literally fell off the bones into your mouth! It was absolutely delicious. I added some peanuts and water chestnuts to the sauce and served over noodles and broccoli. I will be making again and again!

Garlic Chicken, Vegetable and Rice Skillet

I made a few changes to this to suit our family. I was afraid that it was going to be a little on the flavorless side, but this surprised me by being a very good dish that my husband said was "stinking amazing". I used cous cous instead of rice, added about a clove more of garlic, and seasoned the chicken with seasoned salt and pepper. Followed the cooking directions to a T and it turned out amazing! I also used a blend of parmesan and asiago, and sprinkled some more on top when serving. Will be making this again!

Classic Thanksgiving Dressing With Parsley, Sage and Thyme

Made this for a Vegetarian Thanksgiving for my family! Made my own bread, nixed the onions and celery, substituted veggie broth for the chicken, and added dried cranberries. An excellent base recipe!

Mall Pretzels

This is the best soft pretzel recipe that I have found so far! I follow it exactly, except the baking soda bath. I boil the pretzels in it until they float, drain, and then bake. I've used this to make pretzel hamburger and hotdog buns as well. Instead of spending a ton of time shaping the pretzels, I'll just shape a few and then form the rest into ropes and cut them in 1-2 inch pieces for pretzel bites! Delicious!

Cafeteria Macaroni and Cheese

My favorite mac and cheese recipe from this site, ESPECIALLY because it DOES NOT call for processed cheese! I will add different cheeses into the mix, depending on what I have on hand, and I'm never disappointed.
