Rotini with Broccoli

Reviewed: Jan. 27, 2011
I was a little hesitant to try this recipe, my husband and I aren't that big on pasta. But it was VERY good! I cut the recipe in half (as there's just the two of us) but used the full amount of garlic. I also added carrots, sun dried tomatoes, and lemon pepper. The lemon juice may be a bit strong if you don't normally like it, but my husband "hates" lemon and LOVED this pasta. I will definitely be making again.

Potato Chips

Reviewed: Feb. 4, 2011
This is SUCH a fast and easy way of preparing homemade potato chips! I used olive oil instead of vegetable oil and used seasoned salt. I used a steel knife and attempted to get my slices as thin as possible, with mostly success. These were a huge hit with the hubby, who ate almost all of them (3 potatoes worth) and then asked for more.

Balsamic Roasted Red Potatoes

Reviewed: Feb. 4, 2011
I was a little nervous when I put these in the oven...I'm not a vinegar fan and the smell was a bit overpowering. But after one bite, I was hooked!! SO flavorful. I overcooked mine a little and they were so tender they were falling apart, but it was amazing. Thanks for the great recipe, I will definitely use again!

Jam Filled Butter Cookies

Reviewed: Apr. 2, 2011
Very good! I used strawberry jam and sweetened cream cheese to make delicious cookies! Per other suggestions, I used less flour, BUT DON'T! My first batch was relatively flat, so I added in the flour I'd left out. Also, I added 1 tsp vanilla and used 1 whole egg instead of 2 egg yolks. Will make again!

Coconut Oatmeal Cookies I

Reviewed: Apr. 26, 2011
I love these cookies-a quick addition to a classic oatmeal cookie. I wish I had raisins on hand, but I didn't, so following a different recipe on this site, I chopped a few maraschino cherries and added them to half the dough. Yummy! I also added orange peel, which went great with the coconut. I added extra baking powder/soda because of the other reviews (and also because if there's someone that can ruin a cookie recipe, it's me!) My cookies turned out great, but still sort of flat, so next time I'll add cream of tarter per some of the other reviewers. All in all, a great recipe to tweak and make your own!

Quick and Easy Pizza Crust

Reviewed: Sep. 20, 2011
My husband wanted homemade pizza and I wanted a quick recipe...I found it! I absolutely loved this, the dough was so stretchy and easy to work with. Doubled and used half for breadsticks. Made everything in under an hour! Added garlic and Italian seasonings to crust :)

Simple Spinach Lasagna

Reviewed: Jan. 25, 2012
This was very good! I made my own spaghetti sauce, used non-fat ricotta and no-boil noodles. Instead of 2 10oz pkgs of Spinach I used 1 16oz. While this was very good the first time, reheated the spinach got very slimy! Next time I'll use 1 10oz pkg and see how that is. Otherwise, very yummy! Served with breadsticks and pesto.

Addictive Sweet Potato Burritos

Reviewed: Jan. 25, 2012
These were...interesting. I cut the recipe in half and ended up with WAY more beans than needed. I could taste the sweet potatoes above and beyond everything else. They weren't bad, but I'll probably never make again. A plain bean burrito tastes much better!

Spinach Basil Pesto

Reviewed: Jan. 25, 2012
Not your traditional pesto. I ended up adding about three times as much basil to even taste it, the spinach and pine nuts overwhelmed all of the other flavors.

Alissa's Vegetarian Lentil Meatloaf

Reviewed: Jan. 25, 2012
In the oven right now! Before even trying it, I have to say that I ended up with enough mixture for at least 2 loaves, maybe more. I'll add to this after I've tasted it!

Baked Potato Soup

This was good! Not great, not bad. It won't become a staple, but I'll probably try it again with a few of my own tweaks.

K-Dub's Alfredo Ravioli Bake

Reviewed: Jan. 25, 2012
A few changes! first, I used the ravioli that I had on hand- spinach and walnut. Second, I replaced the butter with olive oil and made my own, lo-fat alfredo sauce. Added broccoli and it was delish! A nice way to make a one-dish meal with things you may have on hand!

Mall Pretzels

Reviewed: Jan. 25, 2012
This is the best soft pretzel recipe that I have found so far! I follow it exactly, except the baking soda bath. I boil the pretzels in it until they float, drain, and then bake. I've used this to make pretzel hamburger and hotdog buns as well. Instead of spending a ton of time shaping the pretzels, I'll just shape a few and then form the rest into ropes and cut them in 1-2 inch pieces for pretzel bites! Delicious!

Pretzel Buns

The measurements seemed off in this one. I combined this and the Mall Pretzels recipe from this site to create my own and they turned out perfectly!

Classic Thanksgiving Dressing With Parsley, Sage and Thyme

Made this for a Vegetarian Thanksgiving for my family! Made my own bread, nixed the onions and celery, substituted veggie broth for the chicken, and added dried cranberries. An excellent base recipe!

Raspberry Cup Cakes

These were delicious, except for the fact that mine never set, regardless of the fact that they were in the freezer for days. Had to eat them with a spoon, but MAN were they good!

Cream Puffs

Reviewed: Jan. 25, 2012
My first attempt at cream puffs! they turned out very well, although you could definitely tell that it was pudding. I used 1 pkg vanilla and 1 pkg white chocolate, next time I'll do both white chocolate.
