Apple Pudding

I used this recipe as a base for a low-carb version! I used half the apples, tossed them with 1/2c Splenda and cinnamon to taste, then microwaved a few minutes to soften the apples. I mixed 1c Cream with 1/8-1/4c of vanilla whey protein powder, mixed into the apple mixture, and baked until the top was slightly brown. This is more of a custard than a pudding, but it's delicious and satisfies my craving for sweets!

Honey Lime Chicken Wings

I had high expectations based on the reviews, but these wings were not that good. Too much honey and the sauce was missing something! We dipped them in BBQ sauce and that saved them.

Garlic Chicken, Vegetable and Rice Skillet

I made a few changes to this to suit our family. I was afraid that it was going to be a little on the flavorless side, but this surprised me by being a very good dish that my husband said was "stinking amazing". I used cous cous instead of rice, added about a clove more of garlic, and seasoned the chicken with seasoned salt and pepper. Followed the cooking directions to a T and it turned out amazing! I also used a blend of parmesan and asiago, and sprinkled some more on top when serving. Will be making this again!

Tex-Mex Enchiladas

My husband doesn't normally like enchiladas, and I'm not a huge fan of the normal enchilada sauce...this was really different and good! I made the following changes: We don't like corn tortillas, so I used uncooked flour tortillas from Costco, and browned them in the skillet before filling. Left out the onions, added seasoned black beans and jack cheese to the inside of the enchiladas. Left the sauce the same, put a layer under the enchiladas and a layer on the top. Amazing!

Caramelized Chicken Wings

This recipe is AMAZING! Per previous reviews, I cut the sugar to 1/3 cup. Since we like things spicy, I also added some red pepper flakes and hot sauce to the recipe. The chicken literally fell off the bones into your mouth! It was absolutely delicious. I added some peanuts and water chestnuts to the sauce and served over noodles and broccoli. I will be making again and again!

Cafeteria Macaroni and Cheese

My favorite mac and cheese recipe from this site, ESPECIALLY because it DOES NOT call for processed cheese! I will add different cheeses into the mix, depending on what I have on hand, and I'm never disappointed.

Sweet Chili Thai Sauce

I was trying to recreate a dipping sauce with the same name from the grocery store. I wondered about the large quantity of rice vinegar in the recipe, but still used that amount. I wish I hadn't. My husband said it was very potent, and after reading the ingredients on the store bought brand, it didn't have vinegar in it at all. Next time I will cut the vinegar to probably 1/4 cup and see how that tastes. Also, I had to add about twice the amount of ketchup to get it the right taste and color. I will have to use this as a base recipe and play around with it to get it to our liking.

Thai Coconut and Cocoa Macaroons

Mine didn't turn out very well! I followed the instructions and the meringue turned out well, but I think they needed twice the amount of coconut to really be macaroons. They weren't bad tasting, but the texture was off. Will probably not make again.

Thai Quivering Tenderloins

I used this as a marinade for chicken wings to go along with a Thai Chicken pizza I made. First of all, once they were BBQ'd, I honestly couldn't distinguish any of the ingredients that made up the marinade. However, they were probably the best chicken wings I've ever had! So full of flavor! We liked them so much that I made another batch to marinade over night. Will definitely be using this on many different meats.

Pear and Gorgonzola Cheese Pizza

This was very good and a refreshing change! I've had this recipe in my box for about a year and have been afraid to try it. I shouldn't have! I used the Quick and Easy pizza crust recipe from this site. I also went to the grocery store with the sole purpose of buying a pear for this recipe, so of course i forgot it! Drained and sliced a can of pears and it was still awesome. Next time I will double the toppings, as this was very crusty, and perhaps add a little garlic for extra flavor.

Easy Morning Glory Muffins

This is a really good base recipe! If you don't have something, it's very simple to substitute something else. To try and make these even more healthy, I substituted wheat flour for half of the all-purpose, applesauce instead of eggs, and added 2 tbsp flaxseed and pretty much cut the oil in half or more (I have NO idea why you could possibly need a whole cup! It just grosses me out.) They almost tasted like oatmeal cookie muffins!

Baked Lemon-Basil Pasta

This was really good! I didn't quite have enough sour cream, so I added a little cream cheese to it. The sauce was delicious and stuck to the pasta. Made with colorful bow tie pasta and served with bread sticks! It was awesome.

Chocolate Chip Pistachio Cookies

I love all things pistachio and these were a huge disappointment. I made some changes, so I can't really rate the recipe badly, but I had hoped that the pistachio flavor would have been more pronounced! Like others, I omitted the regular chocolate chips and added only white chocolate, omitting the extra ball on top. I'm glad I did! I don't think I would have liked these at all with semi-sweet chips. Basically they taste like glorified sugar cookies. Next time, If there will be one, I'll add some almond extract and maybe two packages of pudding mix to give these cookies the extra edge they need!

Garlic Mashed Potatoes Secret Recipe

It was a good base recipe, but I made a lot of changes. Cut it down to 6 servings. I used minced garlic and browned it lightly in the butter before adding to the mashed potatoes- I actually ended up adding more garlic to get the taste I wanted. Also added some pepper and milk.
