This was really easy & flavorful, however, I made a few adjustments... I only had a 2.75 lb. chuck roast, so I placed a small bag of pearl onions, with some carrots and potatoes in the bottom of my crock pot. I briefly seared the roast on all sides, and placed it on top on the vegetables. I then mixed 1 can of condensed cream of mushroom soup and 2 envelopes of onion soup mix together and poured that on top. I cooked it on low for 9 hours. When it was done I took all of the meat & veggies out of the crock pot and then mixed together 1/4 cup of water with 2 tablespoons of flour and stirred it into the gravy. I placed the crock pot on high for 30 minutes, and the gravy thickened up nicely. I served it with the gravy on the side.
