Bacon Cheddar Deviled Eggs

I am a huge deviled egg fan, and these were very different - I did need to doctor them up quite a bit. I used some salt, minced white onion, tabasco, and sprinkled in some dry parsley. The cheese flavor was not very strong, so I changed things up a little more by adding sharp cheddar cheese (about 1/4 cup) using a box grater and folded it into the mixture. The mixture is a bit stiff & chunky, so I used a teaspoon sized scoop, that I normally use for cookie dough, to fill the egg whites. I let them chill in the fridge for a couple of hours and dusted the eggs with smoked paprika before serving.

Milk Chocolate Florentine Cookies

I have heavy duty metal cookie sheets, so I found with this recipe that I needed to slightly flatten each mound of dough before placing them in the oven in order for each cookie to completely spread out. I used a teaspoons sized scoop. Be careful the edges brown very quickly!

Authentic Louisiana Red Beans and Rice

I was really excited about this recipe - and I followed it to the letter. It was very bland for my palate and my husband only considered it edible after dumping at least a 1/4 cup of hot sauce on it. If you like red beans and rice without any kick to it - just add some salt and this recipe is for you.

Pecan Pie IV

I had a deep dish pie plate, so I followed the recipe by 1.5 times- I baked it about 70 minutes, until a knife inserted in the middle was clean - the results were fabulous. I took this to a Christmas party and received many raving reviews!

Awesome Slow Cooker Pot Roast

This was really easy & flavorful, however, I made a few adjustments... I only had a 2.75 lb. chuck roast, so I placed a small bag of pearl onions, with some carrots and potatoes in the bottom of my crock pot. I briefly seared the roast on all sides, and placed it on top on the vegetables. I then mixed 1 can of condensed cream of mushroom soup and 2 envelopes of onion soup mix together and poured that on top. I cooked it on low for 9 hours. When it was done I took all of the meat & veggies out of the crock pot and then mixed together 1/4 cup of water with 2 tablespoons of flour and stirred it into the gravy. I placed the crock pot on high for 30 minutes, and the gravy thickened up nicely. I served it with the gravy on the side.

Fried Rice with Cilantro

This was a terrific fried rice recipe, I used 2 serrano chilies and it added just the right amount of spice/heat! Next time I may add some sliced water chestnuts or slivered almonds for an additional crunch. My husband loved it, and he has a picky palate!

Chocolate Pecan Pie III

This pie was awesome and the hit of Christmas! My husband dislikes traditional pecan pie, because he thinks its too sweet. However, this pie won him over. This is a fudgy pecan pie - that I will definitely make again. However, if you are particularly fond of traditional pecan pie, this is NOT a replacement, it is just an addition to my pie repetoir.
