Simply Swordfish

Wonderful! It is definately Simply Swordfish. Most recipes for swordfish involve salsas, chutneys, or rich sauces. This recipe, however, allows the nice flavor of the fish to be tasted. My suggestion is to just brush the fish with lemon juice (as the recipe instructs) - don't marinade. Then simply sprinkle the fish with dill weed and lemon pepper, maybe a little salt and then cook or grill - don't worry about measuring the ingrediants. Serve with rice and steamed veggies. Enjoy!

Spinach Enchiladas

This was a delightful dish. I've made it twice...the first time I followed the recipe exactly - it was good, but kind of bland. So, the second time I added a little red pepper to the mixture and used a hotter enchilada was very good. I will make these again. They were a big hit with the family and the recipe is flexible.

Salmon Loaf

This recipe is wonderful! I didn't have any saltines so I used club crackers instead and it was wonderful, in fact, they probably made it more buttery and rich...delicious! I recommend you leave the bones and skin in the salmon, they are very soft, and you will never know you are eating them. You can easily "smush" them up, if you want, but they are so full of calcium and protien you really should leave them in. Also, I added chopped onions and celery for a little zest! Give this recipe a try!!!

Sweet Potato Casserole I

Excellent recipe, very southern dish!!! I suggest you use half and half, or heavy cream, instead of milk. I've used pecans, and one time bought walnuts on accident, and it was still great with the walnuts. I've never used coconut. I think it would make it too sweet, it's already very sweet. This casserole is even better the next day!

Rosemary Roasted Turkey

My turkey turned out great using this recipe. I did modify it a bit though. I roasted a whole garlic and squeezed the garlic paste out of it. I then wisked that in with the olive oil and other ingrediates to make a thicker rub. I also added chopped sage and put bay leaves, rosemary sprigs and sage leaves in the cavities. I would not recommend all of these herbs on a smaller bird because they are very powerful, but on a large bird (22lbs and up) go crazy! Don't forget to baste! Great recipe!

Maple Pecan Pie I

This pie is absolutely wonderful! The texture is unlike any other pie I've ever had, and for a pie lover, like myself, it's nice to find a recipe that's different. I substituted walnuts for the pecans, and it turned out great. Like maple walnut icecream. This pie is better served chilled.

Fudgy Chocolate Cream Pie

Yes, this is a good chocolate pie. However, I don't feel it's better than any other chocolate pies I've had. You can make a chocolate pie that tastes just as good and is a lot, and I mean a lot, lower in fat and cholesterol.
