YUM, these are delish! I did not have any crisp rice cereal on hand so I substituted approx 4.5 cups of oats. After adding the oats, the mixture was a bit too thick to stir so I added a splash of cold milk. The bars are probably a little more dense than the original recipe due to the oats, but I absolutely love them and will continue to make them this way! Thank you Walleye for a fantastic recipe!

Chewy Granola Bars

these are great! i made mine healthier by limiting the butter to 1/2 cup and compensated by adding in 1 jar of baby food bananas. i also omitted the chocolate chips and instead used craisins and raisins. halfway through the bake time, i removed the pan from the oven and pressed the mixture firmly into the pan again. this helped to prevent them from crumbling. yummy!

Southern Praline Pecan Cake

This is super easy and very tasty! My husband loves it, and he normally despises coconut! Decreased oil as per suggestions and also omitted sprinkling pecans in bottom of pan. Thanks for a great recipe!

Egg and Cheese Puffs

These are great, and SO easy to make! I used egg beaters, low fat cottage cheese and turkey bacon, and they were delicious! I had no problems getting them out of the pan... they popped right out (I used Pam). This recipe will be a staple for brunches!

Saltine Toffee Cookies

OH MY GOSH! This is goooooooood! Who would have thought to use saltines?!! I just made a batch, and it is now cooling. I had to taste it first (of course), and now I have only made it harder on myself to wait while it cools!! Make sure to grease your pan really well so the mixture doesn't stick!!

Banana Fritters

These are delicious! When I make these again, I'll probably try adding a bit more cinnamon and banana. I did as a previous reviewer suggested and placed the mixture into a ziploc bag and piped it in spirals into the hot oil. The result was a nice circular spiral that looked awfully close to a donut, minus the hole in the middle!

Caramel Popcorn

This popcorn is absolutely delicious! I used two bags of microwave popcorn and had plenty of carmel to coat it all. I made clean up easy by lining my baking sheets in foil (greased, of course), and then simply disposing of the foil. Also, I recommend running really hot water with a bit of soap in the pan(s) that you use to make the caramel sauce. Let it sit for 30 min or so. The hot, soapy water liquifies the carmel and you won't have a sticky mess to clean up!

French Toast I

This french toast turned out great! I used whole wheat sandwich bread and had more than enough mixture for 6 slices. I sliced two bananas lenthwise and then in half (making 8 banana slices) and soaked them in the remaining mixture. I then placed them in the buttered pan to cook alongside the french toast. When everything was done, I placed the cooked bananas (or "plantains") on top of the french toast, dusted all with a bit of cinnamon, and then topped with warm maple syrup. My husband and I gobbled it all up! Thanks, Jan!

Cinnamon Teacake

This tastes great and is SO easy to prepare! I will definitely try this again, but I'll likely double the butter/sugar/cinnamon spread and completely omit the final topping. I'm hoping that will make the cake really moist and give it a nice topping without being so heavy on the sugar. This time around was a bit too sweet for me - something I NEVER thought possible!

Vietnamese Fresh Spring Rolls

I think I will try using fresh veggies next time instead of shrimp... the shrimp just didn't do much for me in these rolls. Otherwise a very yummy recipe! Easy to make too!

Make Ahead French Toast

I made this for Mother's Day brunch and have since made it several times. I have to give the recipe to everyone who tries it! It is absolutely fabulous! I have found that I typically have about a cup of egg mixture left over after dipping all of the slices. It works well for me to refrigerate it along with the toast and pour the remaining mixture over the bread after it has been in the refrigerator for an hour or two.

Bananas Foster II

This was a hit! My husband and I served this to his parents this evening, and we all wanted more! I would recommend keeping the sugar mixture at a low boil for around 2 minutes before adding the bananas. Had I added the bananas as soon as the mixture began to bubble (as called for in the directions), I think the sauce would have been gritty from the sugar.

Basic Crepes

Peppermint Patties

These taste very similar to York Peppermint Patties - Yum! The only difference is that they are a bit drier. They are also slightly difficult to dip in the chocolate -- I found it easier to press the mixture in a pan and pour the chocolate on top.

Choco-coconut Bars

These are great! I found it was much easier to knead the coconut mixture with my hands than to try blending it with a spoon. I also didn't bother cutting them into bars and instead pressed them into a pan and poured about 2.5 cups of melted chocolate chips on top. Delicious!
