Buttery Soft Pretzels

I just made these, except i used beer instead of water, and instant yeast instead of active dry. They're delicious, but next time i will do the following tweaks: use stout instead of lager. Was looking for a more pronounced flavor and the lager just didn't satisfy. i ended up using a whole bottle of lager for 5 cups of flour. (if you use beer, heat it up in your microwave before using it) keep the pretzel in the hot soda solution for around 25 seconds instead of just 10 to 15 seconds so the crust will gelatinize a bit more. remember to spray parchment with oil. The pretzels stuck to the parchment paper, but not my silpat. use 4 cups of flour to start instead of all 5.. or use more beer. haha! I also topped mine with salt and garlic powder, then brushed with garlic butter right out of the oven. Yummy, and very filling!

The Best Rolled Sugar Cookies

didn't have problems rolling out the dough. I rested mine over night. The cookies will lose its shape if you over work the dough. Remember to refrigerate scraps before you roll them out to use them again, and refrigerate the dough before baking. Mine turned out a little soft, and fell apart in the ziploc bag the next day, so next time i will roll them a little thinner. To those that are adding more sugar and getting a flat product, it means you put too much sugar in it. Different types of sugar will melt at different rates, causing spread in your cookies. I also suggest trying the recipe using the metric measurements for a more accurate and consistent product. :)

Jamaican Beef Patties

delicious. I added more curry since my husband and i are curry lovers. I think i over worked the dough because the edges were crunchy. Next time i will not roll them out as flat as i did this time. I scaled the recipe up to make 20. They're great for when you're on the go, also great for freezing. just wrap in damp paper towel and microwave for 2 to 3 minutes (depending on your microwave). Thanks for an awesome recipe. I'll be making it again.

Bread Pudding II

Perfection. I used whole wheat bread, and added dates instead of raisins. Next time i will try another variety of bread, but whole wheat came out quite good. I sprinkled sugar on top and put it under the broiler after the suggested baking time just to caramelize the sugar for slightly crunchy crust. Delicious. Will make again and again!

Maple Roast Turkey and Gravy

I make this every year and it is awesome every year. I've never had an issue with the bird coming out dry. It is always moist and flavorful. I always increase the herbs for my personal taste. I find that it makes the gravy at the end more flavorful as well. I also take some of the roasted vegetables from the pan and puree it and add it to the gravy. Haven't tried adding apple brandy to the gravy yet, but I will probably do that this year. To Linda that said 2 cups of apple cider vinegar is too much, it's because it's apple cider, not apple cider vinegar. Read the recipe before you rate it.

Big Soft Ginger Cookies

Wow. I tripled this recipe to make some for family, and coworkers, and managed to make 88 total. I had messed up and sifted the sugar with the flour, so used the sugar for dusting to cream with the margarine, and didn't roll them in sugar in the end. They came out absolutely wonderful. I think i will do the same thing the next time i make them. Also tripled the amount of cinnamon recommended cause i love cinnamon. I found it easier to roll the dough out if you spray your hand with a little non stick butter spray. Cookies are soft and so delicious. My fiance stuffed 2 of them in his mouth one right after the other. Definitly a KEEPER!!

Restaurant-Style Zuppa Toscana

This soup is wonderful. My family and i love it very much. I love to make it mostly in the autumn and winter time because it just warms you right up! For a kick, use spicy italian sausage instead of plain smoked, and add some red pepper flakes. it's great with breadsticks, or even rice :) I also like to add the Kale last to keep it a vibrant green. :)

Flounder Mediterranean

delicious! I didnt have any parmesan cheese, so i used monterey jack, and it came out really good. The flavors of the ingrediants are unique and taste well together. This is my first time making anything mediterranean, and i really enjoyed cooking it, and eating it. I served it on a bed of rice with a side of asparagus. yummy!

Slow Cooker Maple Country Style Ribs

I love country style ribs, and i love using my slow cooker. This recipe was so delicious. It's quite sweet though so for people that don't like their hot food sweet, you might not want to try it. My family and i loved it. The ribs came out so tender. I served it over rice. MMM MMM Good!!

Clark's Quiche

i guess the pie dishes i bought weren't big enough because i didnt have enough room for all the filling. I ended up using only 6 eggs instead of 8 and 1 cup of half and half, and it still overflowed!! Good thing i lined the cookie sheet i had the pies on. The quiche came out so delicious. It was my first time making quiche, and my whole family enjoyed it. My boyfriend ate a quarter of the quiche for dinner!! Will definitly be making this again, and will try to find a better fitting store bought pie. Thanks for a great recipe!
