Buttery Soft Pretzels
I just made these, except i used beer instead of water, and instant yeast instead of active dry. They're delicious, but next time i will do the following tweaks: use stout instead of lager. Was looking for a more pronounced flavor and the lager just didn't satisfy. i ended up using a whole bottle of lager for 5 cups of flour. (if you use beer, heat it up in your microwave before using it) keep the pretzel in the hot soda solution for around 25 seconds instead of just 10 to 15 seconds so the crust will gelatinize a bit more. remember to spray parchment with oil. The pretzels stuck to the parchment paper, but not my silpat. use 4 cups of flour to start instead of all 5.. or use more beer. haha! I also topped mine with salt and garlic powder, then brushed with garlic butter right out of the oven. Yummy, and very filling!

The Best Rolled Sugar Cookies
didn't have problems rolling out the dough. I rested mine over night. The cookies will lose its shape if you over work the dough. Remember to refrigerate scraps before you roll them out to use them again, and refrigerate the dough before baking. Mine turned out a little soft, and fell apart in the ziploc bag the next day, so next time i will roll them a little thinner. To those that are adding more sugar and getting a flat product, it means you put too much sugar in it. Different types of sugar will melt at different rates, causing spread in your cookies. I also suggest trying the recipe using the metric measurements for a more accurate and consistent product. :)

Jamaican Beef Patties
delicious. I added more curry since my husband and i are curry lovers. I think i over worked the dough because the edges were crunchy. Next time i will not roll them out as flat as i did this time. I scaled the recipe up to make 20. They're great for when you're on the go, also great for freezing. just wrap in damp paper towel and microwave for 2 to 3 minutes (depending on your microwave). Thanks for an awesome recipe. I'll be making it again.
