Waffles I

Reviewed: Mar. 10, 2013
Great, basic, easy waffle recipe. Will definitely make again. I'm not a big waffle eater, but all 4 of my kids loved them. I only had one egg, and I added a little apple sauce. Turned out very good. Needed to stay on the iron for about 3 1/2 minutes.

Batter Cakes

Reviewed: Mar. 8, 2013
I thought these were scrumptious! Unfortunately, my 4 kids (super-picky eaters, aged 3-9) wouldn't eat them, so I only gave them 4 stars. I would have given them 5 stars for myself. They were yummy! I did cook them in olive oil instead of cooking spray and had to cook them for a few minutes longer on each side. I ate them with butter only, and they were wonderful and savory.

Chicken Pot Pie IX

Reviewed: Feb. 23, 2013
i made this exactally according to the recipe. Made no changes, and it was wonderful! My husband said he doesn't like Pot Pies, but I made it anyway (because I already had all of the ingredients), and he loved it! He said he would rate it a 5, and I would also. Both for taste and ease in preparation. Thank you for this wonderful recipe!

Banana Pumpkin Bread

Reviewed: Oct. 14, 2012
Delicious and healthy. I made these to use up bananas and canned pumpkin. I made them according to the recipe except I cut the sugar. I trippled the recipe, because I had a lot of bananas to use. Triple recipe gave me 80 muffins. I made muffins to put in my kids lunches, packs easier than bread. I only added 1/2 cup sugar total for the trippled recipe. I also added white chocolate chips, which made it a very yummy desert-ish. I didn't add the optional raisins or walnuts, but added an extra banana because they seemed small. I also used duck eggs instead of chicken eggs. That was what I had on hand and they are supposed to make everything fluffier because of the extra egg white. They are delicious. I baked them for around 15 minutes at 350-degrees and they were perfect. Not sure how this would turn out as a loaf, but it was terrific as muffins!

Microwave Popcorn

Reviewed: Mar. 1, 2012
Perfect and easy recipe! Just what I was looking for!! They are saying more that the addatives used to line the microwave popcorn bag will stay in your body for years and accumulate (and could possibly be cancerous). I threw out all of our microwave popcorn, which I should have done a long time ago, and search for a recipe. This is exactally what we needed!!! Thank you!!!!

Fluffy Pancakes

Reviewed: Feb. 25, 2012
My husband said... "bland, unappealing, lacluster, left wanting!" My 6 year old son loved them. My daughter wouldn't eat them. My opinion... I thought they were okay, but nothing special. Made exactally to recipe. I didn't have whole milk so used 1%, don't know if that made a difference.

Sausage Egg Casserole

Reviewed: Dec. 25, 2011
Excellent recipe. I made exactally as called for. Everyone liked it but I found that I had to cook it for about 20 minutes longer than called for. 70 minutes total. Maybe next time I will separate into two smaller dishes and make it a little thinner to cook faster. Nice to have a make ahead that didn't have a bunch of bread. We made it the night before and served with waffles and a spiral ham for Christmas Brunch.

Healthy Banana Cookies

Reviewed: Nov. 26, 2011
I have made these cookes twice. Once according to the recipe, and the next time I made some changes. They were excellent and super easy both times. The second time I made them my kids wanted chocolate chip cookes, so I substituted the chocolate chips for the dates. I also added an egg (to add some protien), and used the Canola Oil with DHA and Omega 3 to make it a little healthier oil. The egg gave it a slightly more cakelike consistency, but the kids gobbled them up! Thanks so much for sharing this wonderful recipe!!

Scottish Shortbread IV

Reviewed: Sep. 4, 2011
Tastes great! My husband loved this recipe, but it's soooo unhealthy, you might as well eat a cube of butter rolled in brown sugar... lol!!! It is very easy to make and very yummy, but don't indulge too much, definitely not a healthy treat :-)

Honey Baked Chicken

Reviewed: Aug. 20, 2011
Very good recipe. My hubby thought it a little too sweet (which is why it is 4 instead of 5 stars). I would have given it 5 stars because it was very good and super duper easy! It was very easy and very moist and juicy when done. Wonderful recipe! Thank you! I will make it again, but it will not be one of his favorites because of the sweetness.

Brigid's Blackberry Pie

Reviewed: Aug. 16, 2011
First time I've ever used a premade pie crust. Have 4 little kids and just didn't have time. My friends raved! I cut down on the sugar. Only added 1/2 cup sugar to the berries and about 2-3 Tbsp's on top. I omitted the butter, but I'm sure it would be good either way (would probably taste richer with the butter, but everyone loved it anyway). Wonderful and very, very simple recipe! Thanks so much!!

Beef Nacho Casserole

Reviewed: May 27, 2011
This is a supereasy and tasty recipe. I made one substitution just to make it healthier. I substituted nonfat greek yogurt for mayo. I also used baked tortilla chips. I didn't have colby cheese so I used cheddar instead and it was super yummy!

Vanilla Glaze

Reviewed: May 19, 2011
I tried to use the recommendations from other reviewers, granted I have not had much experience making my own icing. I added 1 tbsp corn syrup, changed to 1/2 tsp vanilla extract, 2 Tbsp milk. I found it to be waaaayyyy too runny. I had to added another 3/4 cup of confectioners' sugar and it was perfect. I probably should have added the normal 2 1/2 tsp of milk and gone up from there if needed (because I added the corn syrup). Live and learn :-) But the end result was gorgeous and dried beautifully on my bundt pound cake. Perfect beginners recipe. Thank you!

Warm Spinach Dip

Reviewed: May 17, 2011
I also thought the mustard was overpowering (and I love mustard). If I were to make it again, I would omit the mustard and possibly add some onion. I would have given it a 3 as it was because the mustard taste was overpowering, but it was so easy, and I know it would be awesome without the mustard, so I gave it 4 stars. Quick, easy recipe :-) Would also be yummy to add breadcrumbs to the top and bake for a few minutes.

Insane Oven Beef Ribs

For taste my hubby gave it 4 stars, but for ease of preparation, I give it 5 stars! I didn't have curry, so I added ginger and it turned out great! I love the yummy, sticky sauce!

Country Apple Dumplings

Everyone in my family agreed these were 5 stars. Even my hubby who only eats his mom's blue ribbon apple pie :-) Thanks for the super easy and wonderful recipe!! Oh... and I didn't have mountain dew, so I substituted sprite... worked great!

Amazing Chicken

Reviewed: May 1, 2011
I added crushed cornflakes to the bread crumbs for a crunchier topping and cooked at a lower temp (350), and it turned out fabulous! Hubby loved it too and he hates mayo (I just didn't tell him it was in there) ;-)

Best Chicken Ever

Wonderful and super easy! I didn't have sour cream, so I tried Mayo (which I had seen in another recipe) and it worked great! I also added italian seasoned bread crumbs to the cornflakes instead of other seasonings. Yummy!!

Chicken Parmesan Casserole

Reviewed: Apr. 30, 2011
Turned out dry. I should have listened to the other reviewers and added more sauce. I also used a thicker marinara, so that didn't help. Probably won't make this one again. If I ever did make it again, I would mix the sauce into the chicken/noodle/cheese mixture before baking, and I would try to find a runnier marinara. Could be a good base recipe, but I would not make it as is again.
