Pumpkin Cake III

Reviewed: Oct. 7, 2013
This was the best cake that I ever made. Everyone loved it. I did add 1/4 tsp of nutmeg and 1/4 tsp of cloves. I used the Cream Cheese Frosting II and they worked perfectly together. I baked it in two 9" round pans to turn it into a two layer cake and I needed to bake it for 35 minutes. YUM! I will definitely make this again!!! Thank you!

Cream Cheese Frosting II

This recipe was perfect the way it is presented. I used it with Pumpkin Cake III and it was a perfect frosting. I can image this would work with any carrot or spice cake.

Easy Pavlova

Reviewed: Apr. 12, 2013
This is a great pavlova and it was very easy to make. I did listen to previous reviews and I allowed for the pavlova to cook for about 50 minutes and then I let it sit in the oven to cool so it did not collapse. I used a mix of raspberries, kiwis and strawberries to top the whipped cream. You may want to add the whipped cream and fruit just before serving.

Artichoke Spinach Lasagna

Reviewed: Sep. 25, 2012
Great recipe. I used low-carb noodles, reduced fat Feta and 2 cups part-skim Mozzarella cheese to make it a bit lighter and it was fabulous. I was nervous about the "soupiness" of the mixture when it went into the oven, but it came out perfectly creamy.

I followed the recipe exactly. These enchiladas are awesome! I have never had a homemade enchilada that tasted better than the restaurant version. The leftovers are just as awesome!

Quick Creamy Spinach and Tomato Pasta

Reviewed: Nov. 13, 2011
Thanks for the idea of using sour cream to make the tomato sauce creamy. I did add some mushrooms, garlic, a little onion, dried oregano and fresh basil. I also used 5 fresh tomatoes instead of the canned tomatoes.

Pineapple Banana Bread

Reviewed: Jun. 25, 2011
This bread was so good and moist that my friend and I almost ate the whole thing in one sitting. Yummy! The thing that I did differently is that I uses half brown, half white sugar. I also cut the recipe in half and it worked perfectly.

Everyone loved this! I made it for a holiday party and it was super easy and very tasty. I did microwave the pepperoni first to drain some fat as suggested. I used Pillsbury pizza dough and let it warm to room temp before using. I didn't use an dip and everyone loved it.
