Trying to learn to cook more home-style recipes, not only for health reasons, but for economic reasons as well. Our family has four kids 12-23 y.o., two grand babies, two grandparents and five k9kids (translation- I have many critics)

My favorite family cooking traditions
At all holiday dinners we choose two new-to-us foods. Many dishes we would not have even considered have made our weekly menus because of this tradition. New things are good!
My cooking triumphs
Learning how to get all foods on the table (hot!) at the same time! This takes some work, but is sooo worth it.
My cooking tragedies
Forgetting to add ingredients... Like leaving sugar out of pie or cheese out of quiche.

Corned Beef Casserole
Tasty, not one of the "healthier" meals I make. Came out good as a premade breakfast pie for the kids to heat up before school. Used celery, garlic pepper jack cheese and two eggs (personal preference). Will make again, but not as often as other breakfast pie recipes.

Ground Beef and Rice with Cheese
This was very tasty, but only because of recommended modifications. Ignore the 1:1 rice water unless you are using minuet rice. Seasoned the meat with 1/2 onion, 1/2 red bell pepper, 2 garlics and 2 celery. I added 8 oz of cream cheese and a small jar of con caso into the meat/rice/soup mix (layers did not seem practical). Added one can tomato bisque soup, one can stewed tomatoes, and a few diced jalapenos. Topped with just a bit of mild cheddar. Everyone in the family loved it!

Spicy Pumpkin Fudge
Followed exactly as the recipe states and it was wonderful. Left out for the new years party and it was gone fast. The butterscotch and almonds make this recipe, I did not see a need to switch to white choco chips. It did not over power the pumpkin at all!
