Charleston Breakfast Casserole

I used some of the comments and riffed off this as follows and crowd loved it: used egg beaters, replaced milk with 2 blocks of low-fat cream, sautéed two medium white onions with the bacon and added them, added some spicy sausage (chorizo) and a healthy amount of sriracha. Gooey, cheeses, a hit of heat - nummy!

Key Lime Pie VII

I absolutely agree with all the comments about using purchased, already squeezed key lime juice. Just use one standard lime for your zesting and this recipe couldn't get any easier. OR MORE DELICIOUS! I did not get the bubbles mentioned in the recipe when baking, but the recommendation to back for 15 minutes is spot on. Sets up so beautifully!

Quesadilla Jalapeno Spread

Exactly what I was looking for to jump off from and customize. I add a block of cream cheese and double the recipe. I like things a bit spicy, so that usually means 5-6 peppers/jalapenos from the garden - and sometimes I roast the peppers before putting them in for a little more smokier flavor. Just blend it all up and YUM!

Scallops Mascarpone

I was really looking forward to making this. We had 6 gorgeous bacon wrapped scallops, and that made the prep different, as we had to spend a bit more time browning the bacon around them. All in all, it was tasty, just wasn't knock us out of the park for the investment.

Chicken-Cherry Pie

The parm on our dish burned a bit, so I think I should have covered after 10 mins in the oven. We didn't have creme fraiche on hand, so I substitued 1 1/3 cups of sour cream, 1/3 cup of plain yogurt, 1/3 cup whipping cream and 2 T of brown sugar and healthy dash of salt (another cooking site recipe). We doubled the curry, and it was just delicious!

Cincinnati Chili I

I have been using this site since 2003 and this is the first time I've felt compelled to post. I traveled to Cincinnati for business for several years and always enjoyed Skyline Chili. Now I will intentionally get schedule layovers in Ohio to get my 4-way fix. This is the closest recipe I've ever been able to make - it was just delicious! I did boil my hamburger in the broth as other posters suggested - but I did continue to add 2 cups of broth as it boiled down. We boiled the meat for 2 hours and it had a pretty fine consistency at that point. We upped the cinnamon by 50% like others suggested and also shorted the chili powder by 1/4 (we ran out). Heavenly on spaghettini with finely shredded mild cheddar!! Can't wait to bring this to work for lunch. YUM!
