To Die For Blueberry Muffins

Great recipe! I use olive oil instead of vegetable and skim milk and these come out beautifully plump and fluffy. A good alternative to the crumb topping is to sprinkle a little sugar in the raw over the top before cooking. I use the large muffin pan and these come out better than any muffin I've ever had. Use a little more baking powder by rounding the teaspoon instead of leveling it off. If you want to make a cranberry orange version, add a teaspoon of orange zest and substitute the milk for orange juice. Don't use the crumb topping though, sprinkle with the raw sugar instead.

Banana Banana Bread

This is my go to recipe for banana bread now, sooooo good. I don't know why it's commonly believed you can only use over ripe bananas in banana bread. I prefer to use regular ripe bananas with little or no spots on them. They mash up fine and taste better in the bread.

Eclairs II

This only gets 4 stars because the chocolate topping was VERY gritty. If I make these again, I will look for a different recipe for the chocolate. Otherwise, the filling and pastry part were spot on and very good. I showed my husband the cookies I made last weekend and he said, 'you want to impress me, make eclairs'. So I did! He was suitably impressed. I was surprised how easy it was! I piped the dough using a plastic baggy and clipping off the end. Same for the filling as I didn't want to slice the tops off. Worked well, but you should really get a proper pastry bag if you want to do it right.

Too Much Chocolate Cake

This is the most outrageous chocolate cake I've ever made and by far the most chocolaty. It was amazingly moist and was pure decadence. I topped it with the satiny chocolate glaze (recipe on this site) and sprinkled chopped glazed walnuts mixed with mini semi-sweet chips. It looked like a work of art and I almost hated cutting into it. I think next time I want to impress someone, I'll make this. It's an eye-popper both in looks and taste.
