Bake Sale Lemon Bars

Reviewed: Jun. 11, 2012
The first time I made this,I did not like this at all! However I tried a second time using most helpful ratings and then it was great---there needs to be another recipe instead of this one written. I doubled the lemon mixture part except the white sugar. used 350 setting baked crust only 15mns, used 3/4cup of lemon juice and 1T of lemon extract in my crust mixture. I also added lavender to my lemon mixture after pouring it on the crust. I will make it this way again.

Pecan Pie V

Reviewed: Mar. 1, 2011
I dunno WHAT I did wrong. I followed this recipe exactly only difference was oven temp and timing and eggs at room temp (as recommended). I thought it tasted OK, but my issue was the pecans kept crumbling all over the place, they just didnt stay in the filling, and my crust wanted burn within 10 minutes of placing it in the oven, so I had to cut it off around the top. I even had the temp down to 250 for awhile. It was just like eating pecan pie without the pecans(since they kept falling off and out), and they also wanted to burn a lot around the top. My family just topped it with vanilla ice cream or cool whip to make a big jumbled mess and eat it. I would like to know what I did wrong, cause if it wasnt for the pecans falling out and burning it would probably be good or at least I could adjust it to be right.

Double Tomato Bruschetta

Reviewed: Feb. 11, 2011
This was amazing, but the freshness of the basil/tomatoes definately made this what it was! I used 1/2 teaspoon balsamic vinegar(due to high sulfates and Im pregnant)instead of what was called for, and I didnt have sun-dried tomatoes so I used fresh organic cherry tomatoes with organic roma tomatoes and a little extra olive oil(just a tad). I also reduced the garlic to 1 clove(not a big garlic fan), and added about 1/4 Cup of finely diced bell peppers maybe a little less. I used sea salt and added parsley. This was great and I couldnt find baguetts so I just used toasted wheat bread and it was great. i will try a thicker bread next time, cuz it did make my bread soggy, but it was still great. My husband even loved it and he is not a fan of store bought tomatoes at all.

These are great the way they are. I added extra vanilla and omitted the almond, but its good with the almond too. I also like to add a little bit of flaxseed and use organic sugar.

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Feb. 8, 2011
THE BEST! but I add cried blueberries, white chocolate chips, and cinnamon. I use organic sugar instead of white and brown (same amounts), I use 2 Tablespoons of vanilla(we love vanilla),1/2 cup of walnuts, and 1/2 a cup of pecans, and for some reason Im thinking I may have used 1/2 teaspoon of baking powder too...but I cant remember. I always modify and print my way out and add it to a seperate book. Anyway these are great this way but I love the added blueberries and white chocolate. I wish I could find vanilla chips instead.

Spinach Tomato Tortellini

Reviewed: Feb. 8, 2011
I love it and we fix this regularly. But I dont use garlic, and I use plain tomatoes diced--sometimes I use it with added basil so I dont have to add that but there isnt much difference. This is a great recipe and goes well with a lot of things and its good for leftovers.

American Lasagna

Reviewed: Feb. 8, 2011
This is great when you add an extra 14,5 oz can of diced tomatoes. I use canned tomatoes/past that all have basil garlic and oregano so I dont have to add that stuff. I also recommend using a 16 oz container of ricotta cheese and a 16 oz container of small curd cottage cheese instead of what the recipe calls for. I also use a lot less onion(personal preferance). I cook it on 375-400 covered w/foil for over 40 minutes, and I use no boil lasagna noodles too.

Spinach Quiche

Reviewed: Feb. 7, 2011
I wouldve given 5 stars but ingredients are way off! I used 3/4 cup milk,3 eggs,1/2 teaspoon minced garlic,1/2 of a small onion,10 oz frozen organic spinach, omitted mushrooms(personal choice),6 oz of both cheeses, and only a bit of olive oil heated in pan. It was great this way and I only had to use 1 pie crust this way too. It makes the mixture less than what is called for. I used less salt and pepper too. I will make it my way again.

Baked Asparagus with Balsamic Butter Sauce

Reviewed: Feb. 7, 2011
Perfect way to get in veggies!!! I used 1 Tablespoon balsamic vinegar and 1 teaspoon soy sauce and browned the butter. WORD OF ADVICE--eat as soon as its done otherwise the asparagus soaks up the sauce and it gets soggy.
