About this Cook
30something native of Phoenix!! You don't find too many people born and raised here, but AZ is my home and I love it!! Having grown up with my maternal grandparents, I learned my way around a kitchen fast. Pretty much, I've been cooking and baking since before I was tall enough to see over my grandmother's kitchen counter. Memories of standing on a chair or step stool assisting her in the kitchen with various recipes. Fondest would have to be associated with the holidays. They grandparents had a huge pecan tree so lots of pecan pies and other recipes that called for nuts were often baked. Not to mention all the southern cooking that was done. The recipes that my grams has passed down to me I've adjusted to make a little healthier without skimping on the flavor!
My favorite things to cook
The grill and cast iron skillets gets a good workout in our household - thick cut strip steaks seasoned with ONLY kosher salt and fresh cracked pepper and salmon with dill, parsley, and lemon. Also, can't forget the southern roots: oven-fried chicken, corn bread (johnny cake), ham-hocks and beans, pulled pork with bbq sauce, and sweet tea!
My favorite family cooking traditions
Cooking thanksgiving dinner for the family - turkey or brisket with all the sides! Also, baking during the holidays. A family tradition with my Husband for the holidays: Christmas Eve - Hot spiced cider and noshing on Brie, Wensleydale, and crackers. Christmas Morning - French Toast, oven baked bacon, and eggs.
My cooking triumphs
Taking over the holiday cooking 10+ years ago!
My cooking tragedies
Everyone makes mistakes - but learning from them makes you a better cook!

Pizza Dough I
This dough is super easy. It says you dont need to let it rise. I've used it both ways, unrisen and after letting it rise. Still a great dough! I usually bloom the yeast, water, and sugar separately, letting it foam for a few minutes. I'll add it to the flour, salt, and oil and then knead for a few minutes. Then comes the debate - To rise or to use. :) Sometimes, depending on what type of pizza I'm making, I add herbs to the flour. Rosemary. Thyme. Oregano. Whatever you like! This recipe makes A LOT of dough! When you only have 2.5 people to feed, you can easily cut the dough in half and freeze the unused half for a later time. My cooking/baking tip - If you have a cast iron griddle, use that to bake on. Spread a little cornmeal on the griddle and then spread your dough out. Add toppings and bake!

Keema Aloo (Ground Beef and Potatoes)
This recipe was super easy to make last minute! I modified it just a tad, because I didnt have all of the ingredients that the recipe called for (I was missing the fresh ginger or cilantro, so I used powdered and dried. And I didnt have garam masala. So i found a recipe on here and used that to make my own.) I served over basmati rice. DH and my 2 year old LOVED it! :)

Lemon Garlic Tilapia
Made this last week for the first time and I'm making it again for dinner tonight! Followed the recipe almost to a T - Only addition was salt and pepper to the fish. I used 3 large cloves, 3-4 tablespoons butter and 2 tablespoon lemon juice. Browned the garlic in the butter and added the lemon juice the final minute of making my sauce. Spooned over the fish (had about 5 fillets) and baked for 30 minutes @ 400 degrees. Hubby isnt a fishy guy, but he LOVED this recipe! :)
