Pumpkin Cream Puffs

This is a good basic recipe. The pumpkin flavor in the middle was very slight so next time I would add the whole can of pumpkin. I also topped them with a spiced cream cheese glaze. I will trya chocolate glaze in the future.

Auntie Anita's Lobster Stew

This is the real deal for people in Maine. I have lived on the Maine coast all my life and this is the way we make lobster stew. The secret to rich flavor is using the tomalley and the roe. Once cooked, it disappears into the stew giving it a wonderful flavor. For those that add other ingredients like extra spices, vegetables, etc. it is not authentic Maine lobster stew. We serve this every Christmas Eve in my family.

Spiced Pumpkin Fudge

This recipe was a huge favorite at work. I generally do not like fudge but this recipe has changed my mind. Will make again. I don'tkeep mixed spices around so I added my own amounts of cinnamon, nutmeg, ginger and cloves.

Perfect Sesame Chicken

Thss was a great recipe! I actually made it as written with no substitutions. I don't like heavily battered, fried foods so this batter was perfect for a light, crunchy layer on the outside of the chicken. I quardrupled the recipe for a card tournament and it held up great in a crock pot.

Festive Turkey Meatballs

GREAT recipe. I loved them and so did my guests. I made a few changes, I made the sauce with 1/2 c. mustard, 1/2 c. honey and switched out the ground ginger with fresh minced ginger. Finally, a nice, fresh, new meatball recipe!

Caramel Frosting I

Spicy Sweet Potato Soup

This is an interesting and flavorful soup. To make it more "Thai" I added a can of lite coconut milk. Added creaminess and wonderful flavor. Next time I make it I might omit the red pepper flakes and add red curry paste instead for more of a kick. Definately a keeper!

Potato Dumplings

These dumplings were fabulous!!! The recipe is easy and fun to make. I did double the amount of nutmeg as I like it to be more than subtle. My neighbors are still raving about these after I shared them with them....the recipe makes a lot! Thank you Cathy for this wonderful recipe.

Lobster Stew

Marion, thanks for the real recipe. I too am from coastal Maine but I add one thing to this basic recipe. When picking out the lobsters I save the roe and tomalley. I first saute the roe and tomalley with butter and then add the lobster. It adds a deeper richness to the stew. I also agree, make it at least a day ahead of time for best flavor. :)

Dijon-Tarragon Cream Chicken

This recipe was very good. I added a few things that rounded out the flavors. Changes I made: 1. I coated the chicken with seasoned flour before sauteing in butter/oil mixture. 2. Once the chicken was done, I added 2 minced garlic cloves and 1 minced shallot to the drippings and cooked until soft. 3. I deglazed the pan with a glug of white wine before adding the cream. The garlic, shallots and wine deepened the flavors and gave the dish a better finish. This will definately be one of our favorites from now on!

Mango Salsa

I loved this recipe, it is so colorful! I added 2 ripe nectarines, diced. I used sweet red onion instead of the green onion and I added a dash of balsamic vinegar. The result was very good.

Company Potatoes

I loved this recipe.....throw it together and bake...what could be easier. I subsituted cream of mushroom soup for the cream of potato and used light sour cream and cheese. Still was creamy and delicious. It's also great warmed the next day!

Sesame Pasta Chicken Salad

I loved this recipe but had to add vegetables. I added cashew halves,, red, yellow, and orange bell pepper, pea pods, carrots, celery, and fresh corn. I also decreased the amount of oil in the recipe and used rice wine and not vinegar. I substituted fresh ginger for powdered and added a touch of lime juice. It is very pretty and tasty! It is now a staple for my family at picnics!
