Crispy Coconut Chicken Fingers

Wow! I made this last night. It was soooo easy and really tasted great. I wouldn't change a thing. Even the teenagers raved about it, as did my husband who is really a steak-kind-of-guy. :) I made the sauce but halved the ingredients and used orange marmalade because I didn't have the apricot preserves on hand, and it was a perfect addition. I will definetly be making these again. I'd also think they'd be a real crowd pleaser for company. Thanks for a WONDERFUL recipe!!

Cinnamon Chicken

We thought this was really good. I did halve the salt and the Italian seasoning...wanted to make sure the cinnamon flavor would come through, and I think this combination was just right. I used thighs instead of breasts, so dryness was not an issue. Husband, teenagers, toddler and busy Mom all loved this. No leftovers! Thanks!

Charlotte's Tortellini Salad

This was an excellent recipe. Everyone loved it. What a great combination, with the honey, walnuts, lemon, and olive oil. This could be used in other salads as well! Bravo...well done!

Lemon Cooler Cream Cake

This was wonderful. My husband and I loved it, especially. It's almost addictive! After it was gone, we kept opening the fridge hoping it was still there..lol. Just great served cold; very refreshing, although I do agree with the poster below who noted that the results might be better using and extract (and grated lemon peel?hmm..) instead of the gelatin mix in the frosting. I would recommend trying it as written first. It's really delicious, easy and inexpensive. Thank you, Caroline..this is a keeper!

Sugar Free Sour Cream Linzer Cookies

My boyfriend who is diabetic LOVED these cookies. I made them for him for Christmas..nice presentation as well..they're very pretty. Thanks for a terrific recipe.

Buffalo Chicken Fingers

This is one of the better chicken finger recipes I have tried, and I have tried MANY! I did make a little sauce on the side (Frank's hot sauce, melted butter and little cornstarch) for the adults, but my eleven year old loved it "as is". Came out nice and crispy and golden from the oven. Will definitely be making these again. Yum! :)
