Middle Eastern Rice with Black Beans and Chickpeas

Loved this recipe, will be making this over and over. But I did make some changes: 1. I made it with quinoa instead of rice. 2. I added some yellow diced onion to the quinoa. 3. And added a handful of torn spinach when it was done cooking. 4. As other people mentioned I only used one can each of black beans. And instead of garbanzo,I used one can of white beans. 5. I used only 3T of cilantro 6. 3T of parsley. I served it with a big green romaine salad of tomato and feet.

Strawberry Trifle

Took this to a BBQ, it was a complete hit. Due to what I had on had, I modified the fruit a bit. I used strawberries, 1 banana and lots of blueberries. I was a wonderful mix. Next time I use double the fruit though.

Hawaiian Chicken Kabobs

The flavor was Delish but my chicken was extremely dry. I followed the recipe pretty closely. The changes I made was due to the ingredients I had on had. 1) I marinated my pineapple and veggies separately 2) I had some red and green bell peppers along with yellow onion with the pineapple and that mixture turned out great. I think otherwise it might have been too sweet 3) I made a dipping sauce as suggested. I would make this again with my changes listed above.

Mama's Italian Wedding Soup

Followed the recipe to a T, except I added much more carrots, about 2 cups. And I used orzo pasta instead of shells since that's all I had. And everyone in my family loved it. We are having leftovers tomorrow and everyone is looking forward to it. It is now in the cold weather rotation.

Sweet Restaurant Slaw

Holy Moly was this good. This will be my good to slaw recipe for now on! My changes 1) I did decrease the white sugar to 1/3 c. 2) I used regular mayo. (Helsman) 3) used rice wine vinegar. Loved it!

Garden Pasta Salad

Loved this with some changes 1) Instead of bell pepper broccoli 2) instead of parm cheese I used longhorn 3) added 1 can of black olives 4) added a box of fresh mushrooms 5) I used only one bottle of Cheese Fantas Bernsteins dressing. 6) I used a purple onion.

Mediterranean Chicken

My 3 year old daughter loved this, it is going in the rotation! My changes 1) Added mushrooms and feta at the end. 2) Doubled the sauce. 3) sliced my chicken into strips 4) used 5 cups canned tomatoes 5) increased onion to 1 c 6) increased garlic to 5 cloves 7) Instead of parsley I used italian seasoning. 8) let simmer for only 5 minutes. I thought 10 minutes was too long.

Slow Cooker Enchiladas

I made this for my daughters halloween party potluck. It pretty much finished which was a good sign since there was lots of foods and not very many people. My changes: 1) I used 1 pound turkey / 1 pound beef. 2) I used Pace Restaurant Style Salsa 3) 1 can cream of mushroom soup 4) Decreased the cheese to just over 4 cups. 5) I added 1 yellow onion and frozen mixed veggies to the meat mixture 6) Topped with green onions and sliced black olives 7) Cook for 2 hours 8) Doubled tortillas throughout.

Parma Wrapped Chicken with Mediterranean Vegetables

This recipe was really good - I made this with bacon and canned diced tomatoes since that is all I had on hand. I will def used prosciutto and fresh tomatoes next time. The only other changes I made was to use brown potatoes and added 3 garlic cloves.
