Black Bean Huevos Rancheros

Pretty tasty. Spouse suggested more cheese melted on top. I found tortillas a little dry. Cilantro in salsa is a must. Think I'd also like it better if diced red onion were substituted for green onions.

No Sugar Added Cookies

I changed the recipe as follows: Did not chill the dough, baked when finished. Used only 1/2 C butter, used 1/2 C whole wheat flour + 1 cup all-purpose flour, used only 1/2 C rolled oats, added chocolate chips and 2 level teaspoons of sugar. Added a dash of milk. They do come out like scones and don't spread much, which is fine, but despite some sugar and chocolate, they are still not tasty/sweet at all. They also came out too dry, so cutting back on the butter was not a good idea. I will finish eating these (they're okay) but keep looking for the perfect low fat, low sugar recipe.

Sugarless Banana Walnut Cake

This "cake" is not sweet at all. The recipe as it is written here is really for health-food lovers who don't expect more than a hint of sweetness. I personally liked it (even used half whole wheat flour), because I was looking for something healthy, not expecting a treat. I do suggest fancying it up with other ingredients, such as adding coconut flakes, frozen blueberries, raisins, chopped dates, extra banana, chocolate chips, spread some honey on top, or whatever you like most. If you like baked goods that taste "healthy" and aren't expecting a real dessert, you would probably be satisfied. If you want something healthy to satisfy your sweet tooth, you'll need to add something more to this to sweeten it.

Simple Savory Quinoa

Surprisingly good. I used the juice from half a lime and didn't have celery so used some mushrooms. Double the recipe if you want leftovers--was enough for 1 meal for 2 people. If you use vegetable bouillon to make your broth, I'd suggest 1 teaspoon bouillon. Add some beans to make it a full meal.

Sugarless Bars

It's not sweet like cake but more like a nice bread with nuts and sweetness from the dried fruits. I used 1/4 whole wheat flour and butter instead of margarine, and the texture is soft and just moist enough (25 minutes baking time). I wouldn't make this for someone who is diabetic or trying to lose weight, because the dried fruits and flour do contain a lot of sugar/carbohydrates.

Orange-Fruit Nut Truffles

Easy and very fast recipe! These are a great snack, and I love that they have a lot of fiber and Omega-3 (from the walnuts). I rolled the balls in shredded coconut, and they are delicious! I used plain raisins, will try with chocolate-covered raisins next time.

Best Brownies

Are very thin, are more "cakey" than fudge-brownie like, baked in 20 minutes. I like but don't love them. I definitely suggest adding chocolate chips, peanut butter, and/or nuts. I didn't make the icing part of the recipe.

Raspberry Streusel Muffins

I used half whole wheat flour and threw in a cup of frozen blueberries, along with the cup of frozen raspberries, and made it in a loaf pan (loaf baked in 40 minutes). It's delicious! If you like very sweet baked goods, this isn't for you. It's not overly sweet. I think it's ideal, though, and I recommend adding some blueberries, too, if you have them.

Darra's Famous Tuna Waldorf Salad Sandwich Filling

It was good tuna salad. I didn't add a shallot, though, and I just adjusted the mayo/mustard/curry amounts to my own taste. I would make this again but use mostly yogurt and little mayo to try to make it healthier.

Lentil Soup with Lemon

There is something about this soup that is so good. Being vegetarian, I used vegetable broth and used 1 teaspoon dried cilantro powder instead of fresh cilantro. Otherwise made it as stated, with red lentils. I think the spices and lemon juice (I used juice from half a lemon) make this soup so wonderful. I'd recommend doubling it; this recipe will last 2 people one meal. I'd like to try adding a diced potato next time. Thanks for the wonderful soup recipe!

Apple Bars

I didn't have baking soda so used baking powder instead, used a little less sugar (3/4 cup) since I don't like things overly sweet, and also threw in some raisins and a little bit of milk to make it easier to spread out the batter. I think they're great! It only took 30 minutes for them to bake. They didn't rise, so this recipe is like a bar (think lemon bars). Doubling the recipe in an 8 X 8 pan would make it thicker, more like an apple cake. It doesn't really make 16 bars, unless you like them very small. I cut it into thirds for a total of 9 bars. Using a type of apple that's sour is a good suggestion.

Roasted Pumpkin Seeds

I added extra salt, and they still have little flavor, and I think they are too hard, even though they are well-browned. I think 2 tsp. is too much butter, as they were greasy. Next time I will try the "boil them in salt water" method instead, then bake with oil and spices.

Pumpkin, Sweet Potato, Leek and Coconut Milk Soup

Made as stated and really enjoyed it. (Didn't measure the exact sizes of pumpkin or sweet potato, just used one of each and the whole can of coconut milk.) I can see why some people thought it needed some pizazz, like garlic, ginger, or spices, and I would suggest that, but I still found it really good without.

Marinara Sauce

Enjoyed it. Recipe here is enough sauce for about a half-pound (typical package) of pasta, so be sure to double this recipe for a whole pound of pasta. The only change I made was adding an extra diced tomato (and therefore less water since tomatoes add water when cooking), because my can of tomatoes was only 14 ounces and really enjoyed the extra tomato chunks, so next time, I'll add a couple of extra tomatoes.

We enjoyed them. Used a higher temperature, 200 degrees C. Cooked in about 40 minutes. Let them brown a little, sprinkle a little bit of salt on top at the end.

Mexican Rice Pilaf

Used regular (not quick-cook) brown rice (cooked in twice as much veggie broth as rice.) Did not have chili powder so used 1 tsp. cumin, 1 tsp. paprika. Also added mushrooms and a can of beans and used 2 tomatoes. Used shredded gouda cheese. Otherwise made as stated. It is good stuff!

Pasta and Cauliflower

My suggestion is to avoid measuring and instead add salt, pepper, garlic powder, olive oil, Parmesan, and your own favorite shredded cheese all to your heart's desire. I roasted the cauliflower with olive oil, salt, pepper, and garlic powder, and it came out great! Then mixed it into the onions and added it to the pasta along with 2 types of cheese (parm and shredded Gouda). I also agree with the suggestion to add back some of the cooking water to the pasta; I used a whole grain pasta, and it soaked it right up. I can see why some people found this recipe a little dry. It's good, but the flavor is not wonderful/intense enough for 5 stars.

Cinnamon Streusel Orange Muffins

They have zero orange-flavor, even though I added extra orange juice, and the crumbly topping was a disaster for me (it melted everywhere.) Also, there was only enough batter for 11 small muffins, without any nice muffin-top. They stick to the liners. Cannot recommend this recipe.
