Orzo Pasta Salad with Basil Pesto, Cherry Tomatoes and Fresh Mozzarella

We loved this! I used a different type of pasta, red cherry tomatoes, and didn't have garlic but otherwise followed the recipe, and it was delicious. Used about 10 - 15 larger leaves from my basil plant. If using larger-sized pasta than orzo, I'd suggest making some additional pesto so there is plenty to coat your pasta.

Baked Macaroni and Cheese

I liked it, but I would use less butter next time. My husband calls it "a good mac-and-cheese." Our 3-year-old did not like any of the macaroni that were crunchy, though, only the soft pieces from the bottom. I thought the flavor was good, but I did use two different types of cheese, and I did not hold back on adding salt. It's not the prettiest mac-and-cheese, so I would not make it to serve guests. It was finished @ 30 minutes.

Banana Oat Muffins

We were happy with these. They rose well. Used 1 very ripe banana, and they taste a lot like banana. I did use 1/2 C of whole wheat flour as part of the flour. Next time I'll use only all-purpose flour. For baking soda, they only need 1/2 tsp. Suggest adding crushed walnuts.

Chocolate Chip Orange Zucchini Bread

Was okay. Didn't "love" it, but we ate it. Only wanted to make 1 loaf, so I cut the ingredients in half (used 2 eggs.) I reduced the sugar and felt this is one of the few recipes that probably needed the full amount. Could not taste the orange peel, so I'd just leave that out next time. For my oven, baking it 50 minutes made it a little too dry.

Tortellini Picnic Salad

I made this without the green onions and just added chopped fresh basil. I also used only about 1/4 C vinegar. Instead of 2 packages (9 oz / 250 g. each) of tortellini, I would use 3 packages with the same amount of other ingredients next time. The walnuts really made it good. I would like to try adding green onions next time.

French Veggie Loaf

Followed recipe except did not add the extra 1/3 C of oil, and it came out nice and soft, was finished at 45 minutes. I suggest adding about 1/2 to 3/4 teaspoon salt to the veggies as they cook. I brushed butter on top before baking. My husband and I enjoyed it, but we both feel it needs herbs. Our 3-year-old didn't like it, unfortunately.

Apple Cinnamon Zucchini Muffins

My 3-year-old and I liked these. I cut the recipe in half (3/4 a large zucchini, 1 small apple, 2 eggs, 1/2 C sugar, etc), which only made 9 muffins (filled the papers most of the way.) They were not quite finished baking at 25 minutes. We both said they taste good, and they're soft and moist. They need to cool fully before eating so they won't stick to the muffin papers. I agree that adding chopped walnuts would make them better.

Carrot Cake

Came out very well using our 10 inch tube pan and baking approx. 50 minutes. (After 40 minutes, it appeared done, but when I cut a slice, it was not; it looked baked but still smelled like batter. After heating the oven again, and then cooking 10 more minutes, it was perfect.) Moist and enjoyable cake. (Note: I didn't make the frosting. Used approx. 5 large grated carrots.)

Sean's Falafel and Cucumber Sauce

Rating the sauce only. Used the sauce recipe over falafal balls that I bought. I did include the optional mayo. We enjoyed the sauce, but I think a little bit of spices would have added more flavor.

Janet's Rich Banana Bread

But make it with only 1/2 cup of sugar, and it will be perfect. Start checking it at 50 minutes of baking. Comes out moist and delicious. I have made it with very thin slices of banana or mashed banana and like it either way. Have also used plain yogurt instead of sour cream, and it comes out just as good. Be sure to use only 1/2 cup of sour cream or yogurt, as using the entire little container to avoid having a little left-over resulted in a loaf that was not fully baked.

Peanut Butter Loaf

I did 2/3 cup of natural peanut butter, 1/2 cup of brown sugar, and used plain milk. Added chocolate chips (50 grams). The taste is good. It is moist enough. However, after 45 minutes of baking, it is overly baked on the outside, too dark-brown and crispy. I checked it at 30 minutes, and it was still raw dough on the inside but what I consider done on that outside. Then at 45 min., the loaf is overdone on the outside. Watch your baking time carefully!

Green Green Pasta

I have to admit I just used this as a starting point, so I used a zucchini, frozen green beans, and some frozen broccoli and cooked them with mixed herbs (fresh herbs that come frozen in little packages at my local store)and the olive oil, salt, and pepper. I didn't have garbanzo beans nor green onions and used chunks of fresh mozzarella instead of feta, since my family prefers it. Sorry about all the changes, but it was still delicious!

Zucchini-Chocolate Chip Muffins

These are moist, delicious muffins. I wouldn't make any changes (maybe a little less salt and baking soda). I did reduce the sugar the first time I made it, and they were better the 2nd time, when I simply followed the recipe. The one thing I don't measure is the zucchini. Just grate an entire zucchini into the batter, using the large holes on a four-sided grater, and for me, the baking time required is more like 25 - 30 minutes. They are fab with raisins or chocolate chips.

Caribbean Curried Peas (Lentils)

To use ingredients we had on hand, I did make the following changes: 1 level tsp. of ginger powder, chili powder, cilantro powder (instead of fresh ginger, chili, cilantro), and I used only 2 TBS. curry powder and added no sugar. I made it with 800 ml water, 1 level TBS. vegetable-broth-powder, and 1 cup of 10-minute-red-lentils. I also added a diced tomato. It was spicy and you could taste the curry, but not too spicy. We liked it a lot, and I am sure it's even better with fresh ginger and cilantro.

1 Tablespoon cocoa powder is too much, and it needs more milk and less sugar, for my taste. I'll try 1 teaspoon cocoa, 1-and-a-half teaspoons sugar, and some extra milk (flat, not rounded spoonfulls.)

Chocolate Pecan Pie I

This pie quickly started browning heavily for an almost-burnt appearance. I lowered the heat a little and cooked the minimum amount of time to help but by the end, it looked like slightly-burnt meringue on top. The one change I made was using butter instead of margarine. It tasted decent but wasn't attractive.

Tomato-Cream Sauce for Pasta

The flavor of the dried herbs is too strong, and it needs more salt (I used fresh tomatoes) and for the sauce to be completely pureed. I doubled the recipe to have enough sauce for 3/4 of a box of penne (but used just 1 onion, 4 medium-sized fresh tomatoes, 1 tsp garlic powder instead of fresh garlic, 1 T basil. Everything else doubled.)

Apple Crisp II

Have made twice and we're very happy with it, but we use only half a cup of white sugar. It works best for us to use ~ 8 medium-sized apples and no water! You don't need to use quick-cooking oats; we always use regular oats, and it comes out nice and crumbly! You can also use a little less than 1/2 cup butter. I like to add extra cinnamon.
