Porcupines

I thought that this recipe was charming, in that the protruding rice after baking really did make them look like little porcupines or hedgehogs or whatnot. It was a nice, quick, kid-friendly meal for a weeknight. I paired with mashed potatoes and green beans. Might want to double (or triple) the tomato sauce to have enough to douse the mashies. I also added a few more seasonings. It turned out very well, and I was thankful to add another meal idea into the weeknight rotation.

Coconut Cream Cake I

OK, I need to stop eating this cake! I made it almost exactly like the original instructions except for three things: I used coconut milk instead of cream; I used egg whites instead of whole eggs; and, I baked in two 8" pans instead of a 9 X 13". The only drawback that I did not account for was the cream mixture made the cakes difficult to remove from their pans after the chilling period. So, it got a little sloppy there -- but frosting covers many cake sins! Especially this lovely, light whipped cream frosting covered with coconut flakes. And I have to stop eating this cake! Thanks to GPAIN for the recipe and to Allrecipes for highlighting it!

Spinach Quiche

This is the best quiche I have ever eaten. EVER. I think I made it exactly as written here. I used the "Basic Flaky Pie Crust" (submitted by Stephanie)as my crust. I could not stop eating this quiche and finished it all by the next afternoon (that means I ate 6/8 of it!). Thank you, thank you for this delicious recipe!

Spanish Chicken and Rice

I have made this recipe about three times. I follow it close to the letter -- using boneless breasts instead of bone-in; using three or four breasts; sometimes adding black beans into the rice mixture -- but, the flavors, the spices, and the method I do not mess with. The coating and browning on the chicken makes it so tender and melt-in-your-mouth delicious -- oh my! And my husband just raves about the rice. A new family favorite in our house -- Thanks for sharing, Mrs. Nelms!

Vintage Lemonade

Well, my daughter finally likes lemonade now, thanks to this vintage recipe. To me, the recipe as written seems almost more like a concentrate. I added water to my dispenser (1 gallon?) until it was 3/4 full, and I probably could have added even more water. But, it is such a lovely flavor -- neither too sweet nor too sour. Peeling the lemons was a bear, so I'm thinking next time I'll squeeze out the juice while in rind, and then cut up the peels and soak them in sugar. Yummy, yummy -- this will be great for the lemonade stand. Thanks, Aunt Suzie!
