Award Winning Soft Chocolate Chip Cookies

I have another recipe for chocolate chippers using pudding, but my family likes these better. This is one of the best cookies I have ever made, and I have tried quite a few. They are just the right texture and very rich. I used pecans instead of walnuts, and I used half chocolate chunks and half mini chips. Definitely a winner!!

Golden Sweet Cornbread

Death By Chocolate IV

This is always a hit. When I make this for an adult crowd, I substitute coffee liquer for the chocolate syrup. I think it tastes even better that way.

Sue's Hot Fudge Sauce

My family loved this recipe. My daughter and I especially as we are chocoholics. I added a little more cocoa as advised in previous reviews. This one will replace any store bought brand I used to buy.

To Die For Blueberry Muffins

These are terrific muffins. Very moist and fluffy. I did add extra blueberries. I also used about 2/3 the amount of sugar and 1/3 splenda. They still turned out excellent. I will be making these often, especially during blueberry season!

Pecan Pie V

This pie went over really well. I had to quick whip up a pie for a shortage on Thanksgiving and everyone loved it. Much less sweet and sticky than the corn syrup variety. I will make this one again.

Fresh Apple Cake II

This is an excellent easy apple cake. I also reduced the sugar per other reviewers suggestions. Turned out very moist and needed no icing at all. I will definitely be making this one again.

Hot Artichoke and Spinach Dip II

Excellent, Quick and Delish!!! I literally threw this together in just a few minutes and it was gobbled up nearly as fast! I did alter it a bit, by omitting the garlic salt, and just using 2-3 small cloves of fresh garlic instead, Plus I didnt measure the spinach. I just used a few big handfuls off the brick. (I have small hands) Even my husband who hates spinach and cream cheese gobbled this treat up!!

Quick Chicken Enchiladas

I was a little hesitant about this recipe at first. As written it sounds a bit bland. But it proved to be an excellent base to start with. I used fiesta cheese soup and added about a Tbsp of taco seasoning along with about 1/4 of the can of green chiles. I also topped the dish off with 1 cup of reduced fat cheese. I decreased the milk to 1/4 cup as well. This turned out to be a good balance of mild vs spicy to accomodate my 8 y/o who doesnt like things too hot. If he werent eating with us, I would have added more taco seasoning and perhaps some spicy traditional enchilada sauce. All in all this was a very good, super quick meal.

Cherry Pie III

Finally a cherry pie success story. I've been trying for 13 years to make my husband his favorite dessert and each time, I end up throwing it in the trash. This recipe is foolproof. I also upped the cherry amount as stated in previous reviews. Yum Yum Yum. I made a little too much filling (if thats even possible!) and we had it over ice cream. Delish! The only problem is now my husband wants one pie a week. LOL

The Whole Jar of Peanut Butter Cookies

These truly do melt in your mouth! My husband who is not a peanut butter cookie fan at all ate 12 in one sitting! I made these a week ago and my family is already asking for another batch. Omitted the peanuts and salt as I used salted butter and we prefer a smooth peanut butter cookie. Otherwise, followed recipe exactly as written. Kudos!

Pineapple Upside-Down Cake V

This has become a family favorite. Extra moist and delicious. I don't make it as a round layer cake, but rather use a 9x13 pan putting half the batter down over the pineapple and brown sugar, then sprinkle a layer of crushed pineapple followed by the rest of the cake batter.

Cherry Pie IV

I really wanted to give this a five star rating, but since I don't use the crust recipe I didnt think it would be fair. The filling is 5 star quality for sure! Cherry pie is my husband's favorite and after 16 years, I'm finally able to make it for him. He's even told me he likes this pie better than his mom's and that's saying something.

Quinoa and Black Beans

I don't usually rate a recipe when I haven't made it exactly as written. However the alterations I made likely made little difference in the outcome. This is by far one of the best quinoa dishes I've ever had! I made minor substitutions...used only one can of beans, used canned corn (didn't have frozen) and used dried coriander instead of fresh cilantro (also because I didnt have any on hand) I think the flavors would probably be close would I have made it just like it was written. Perfect texture, spice and sweetness!
