Key Lime Pie VII

Delicious and sooo easy. A bit on the sweet side but I didn't top mine with any cream. The cream might be good to temper the sweetness. I can't believe how fast it is to make as well. It makes more than enough filling so next time I won't fill my crust so much.

Uncle Dank's Gumbo

Was good but needs seasoning. I prefer Merwin's Shrimp Gumobo (also on this site). Merwin's needs more seasoning as well but I liked his method of throwing the chicken in the pot, bones and all. I got more chicken off the bone that way. The two recipes taste nearly the same, I just prefer Merwin's method.

Merwin's Shrimp Gumbo

I am from New Orleans and this is the REAL DEAL. It is a bit bland but it is up to you to add your spices. If you taste while you cook, you can get it right. I should have tasted mine more...I used 2 tsp of cajun spice mix and 1/4 tsp of salt. Next time I will try 3 tsp of spice mix and 1/2 tsp of salt. (I am cautious on the salt because I am borderline hypertensive.) I also used a cup of okra because I believe you gotta have okra in gumbo. I'm surprised this didn't have celery in it and might try it with that next time. Also might try substituting some of the water for chicken stock just to up the flavor. This is my 3rd attempt at gumbo and definitely the best one I have made so far. This is a great recipe to start with, now just need to make some tweaks to make it PERFECT. As we say in New Orleans, "dats good eatin'"!

Mini Cheesecakes III

I will probably make these again. Good texture but they were overly lemony. I just wanted cheesecake, not lemon cheesecake. Next time I make it, I will leave out the juice and/or reduce the amount of zest. I think it needs some lemon, just not as much as the recipe called for.

Never Fail Biscuits

GREAT biscuits! Great taste, great texture. Will definitely make again. Only thing was, I used a 2inch wide cookie cutter and the biscuits were too small. Will use the bigger cutter next time....

Cracked Sugar Cookies I

SIMPLY THE BEST!!! I followed the recipe to a T and they were awesome! Still soft and chewy a few days later. The key to getting a chewy, cracked cookie is 1) do not overbake, the edges should just be slightly brown and 2) all ingredients should be at room temperature for maximum spreading. My husband thought they were store bought they were so good. Will definitely make this again any time I am hankering for a real sugar cookie!

Yummy Honey Mustard Dipping Sauce

Fried Cauliflower

Cajun Chicken Pasta

FAB! I'm from New Orleans and was very impressed. Only thing, I might omit the mushrooms next time. They turned the sauce brown. I can't think of any cajun dishes that have mushrooms in 'em! Will definitely make again though. It was delicious!

Chocolate Covered Cherry Cookies II

I made only half the icing but added 6 tsp of cherry juice to it and 2 tbsp of cherry juice to the batter. The cookies came out with a definite cherry-chocolate flavor. These are very pretty and delicious too!

Great cookies! Very much like a brownie in taste and quite chewy as well. I coated my cookies in a lot of powdered sugar and also baked on the 2nd highest rack in the oven as suggested by others. I was able to make about 54 cookies. They's so pretty too!

Actually Delicious Turkey Burgers

This recipe is fabulous! Only added about a tbsp of Worcestshire sauce. Also note, these burgers do not shrink like beef burgers do so make the patties the exact size that you want to eat them at.

Pecan Pie Bars I

Delicious! Used 1/2 brown sugar and 1/2 white sugar and brown sugar in the crust as suggested by others. I used a 10x15 jelly roll pan with baking paper and it didn't spill over or stick. I had a little less than 1.5 cups of corn syrup so that probably helped it not to spill over. Would make again definitely but I don't think that it will stop me making pecan pies altogether!

Sugar Cookie Icing

Definitely add the sugar to the milk not the milk to the sugar!! It is very hard to mix if you add the milk to the sugar all at once. Great taste though. Will definitely use this recipe again.

The Best Rolled Sugar Cookies

Delicious and still soft after a few days. These aren't very sweet sugar cookies but are great as long as you frost them. Also, followed the advice of removing the excess dough from around the cutouts instead of removing the shapes themselves. Best advice ever!! I will definitely use this recipe again.
