Salsa

Ingredient wise this pretty much matches a recipe I have been using for a while and it always works as long as I TASTE it while in the process. I've noted a few complaints and I think tasting it while in process is the key. Some tomatoes are sweeter and some are more sour, some jalapenos have more heat than others, and some onions vary is sweetness and strength. You have to taste and make adjustments because of these variances. You can also make it with canned tomatoes for more of a Mexican restaurant consistency.

Broccoli Casserole

I would have given 5 stars had it not been for the mayonnaise. We like mayonnaise and even though I used a reduced fat mayo it seemed to make it a little too rich. I will make it again but not include the mayo. I made a change in that I used the Campbell's Cream of Mushroom soup with Roasted Garlic. In light of the roasted garlic I did not add garlic salt, just a very light sprinkling of regular salt. It's a tasty recipe and worked well with some grilled chicken breasts.

Kielbasa with Pasta

I made this recipe and it was a hit at our house. Since I had a couple of cans of pasta sauce I substituted for stewed tomatoes. The kielbasa worked fine and was delicious but I am sure any sausage would work. This one is a keeper. Qucik, easy, tasty.
