Cheeseburger Soup I

AMAZING. I adjusted the recipe to 11 servings so I could use a 4 cup box of chicken stock and one pound of ground beef. I added two minced pickled jalapeños and used a handful of fresh chopped parsley, 1 Tbsp. Minced fresh thyme and 1 tsp. dry basil. To save some of the fat content, I just added the flour to the sautéed beef and vegetables to make my roux, no butter and a big splash of red wine to deglaze the pan and the milk after a few minutes.

Stuffed Potatoes

Awesome and if you don't have the prepared dip, use one 500 ml (16 0z) tub of light sour cream and one pkg. of onion soup mix, let sit to absorb flavors and add cheese. Great and really hold the heat.

Lamb and Winter Vegetable Stew

AMAZING!! My family loves lamb, but we have a hard time getting them to eat veggies.......not any more. One son gobbled two helpings and the other finished everything on his first. Mission possible and my new fav stew recipe. I sauted the onion and celery with the meat after about 5 minues, doubled the recipe and tripled the spices.

Golden Yam Brownies

Wow, my kids love these and what a fabulous nutrition value for kids who won't eat veggies and fruit. 1 cup yams(sweet potatoes)(raw, cubes)= Calories: 177; protein: 2.3g; Carbohydrate: 41.8g Total Fat: 0.25g; Fiber: 6.1g; *Excellent source of: Potassium (1,224mg), Vitamin C (25.6mg), and Vitamin B6 (0.44mg) *Good source of: Thiamine (0.168mg)

Baklava

This was amazing. I added an extra cinnamon stick and the juice of 1/2 lemon and then put the lemon into the sauce while it cooked. I got rave reviews from a friend that used to own a restaurant and sold baklava.

Best Hamburger Ever

Very good and tasty. I only had cheddar cheese and melted it on top rather than in the burgers. I also added about 2 tbsp. finely ground bread crumbs to hold the meat together. Kids loved them.

Cream of Cauliflower Soup I

Very Good. I scaled down the milk/whipping cream liquid to 1 c. half & half for the right consistency for me. My opinion is that another c. would have made the soup too watery. Start off with half and add to your liking.

Shredded Brussels Sprouts

Chocolate Chip Cheesecake I

This is without a doubt the best homemake cheesecake I have ever tasted, definetly Cheescake Factory quality. I was asked for the recipie the very first time I made it and it will be accompanying me to the next pot luck. The condensed milk makes the difference. Thank you, Thank you, Thank you!!!!

Baked Ziti I

Very cheesy and my family loved it. I used lite sour cream, skim mozza cheese, added 1 tbsp. minced garlic and 2 tsps of each oregano, basil and parsley. I upped the ground beef to 2 lbs. but not again; it's just too much. There are a lot of preservatives in jarred sauce and next time, I'll make my own with two large cans of italian tomatoes and spices.

Yikes, only one beer is far too strong. I use four beer and serve them tall over ice from a jug. Just don't mix them too much as they can foam up.

Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

Didn't have Apple Jelly so substituted Apricot jam. Didn't have time to make the port sauce but there was plenty of Au Jus and meat was tender and juicy. Got rave reviews.

Mandarin Shrimp and Vegetable Stir Fry

Awesome. I didn't have quite enough marmalade, so I used about 1/4 C crabapple jelly to make up the difference. It was amazing. I also used all the veggies out of my fridge: cauliflower, mushrooms, celery, carrots, onions & broccoli. My new found favourite stir fry sauce.

Brunch Omelet Torte

This was wonderful, albeit a lot of work in the morning, at least an hour+. Next time I'll make it the night before and leave it in the fridge, putting the egg wash on just before it goes into the oven. Alternately, at least cook your potatoes & onions, grate the cheese and put the pastry in the fridge from the freezer the night before. Got rave reviews from my 8 guests.

Mama's Best Broiled Tomato Sandwich

Awesome. I used an unsliced artisan grain bread and after slicing, toasted it til golden under the broiler. I marinated the tomatoes (used half the oil)for about a half hour which was too much and they got a bit soggy, so next time I'll cut it back to 10-15 minutes. I used Kraft Parmesan in the mayo and fresh grated asiago on top. It will now become a staple.

Black Chocolate Cake

Very good cake. I made a few adjustments to cut the fat (used 1/3 C Golden Crisco and 1/3 C. Applesauce) and substituted 1/2 C. of the water with brewed coffee. Very light, moist, flavourful cake. I glazed it with the following while the cake was still warm: Beat together w/mixer: 2 C. Icing sugar, 2 T. Cocoa, 2 T. butter, 2 T. boiling water & 2 t. vanilla.
