Shepherd's Pie V

Very quick and nutritious, but as per other suggestions, recipie calls for too many potatoes. I scaled back to 5 large and it was still too much. I also sauted the beef with one finely chopped onion and 1 tbsp. garlic, doubled the beef boullion and added 1/4 c red wine about 10 minutes before it was done. My 8 yr. old didn't care for it much, but he's picky. My husband and I really enjoyed it.

WOW WOW WOW is all I can say. My company couldn't stop raving about them, neither could my family. Very moist, brownie texture and relatively easy to prepare.

Shredded Brussels Sprouts

Simply Awesome. With the exception of my picky eight yr. old twins, everyone loved it. I hand shredded them which took forever, next time I'll use the food processer.

Chocolate Chip Cheesecake I

This is without a doubt the best homemake cheesecake I have ever tasted, definetly Cheescake Factory quality. I was asked for the recipie the very first time I made it and it will be accompanying me to the next pot luck. The condensed milk makes the difference. Thank you, Thank you, Thank you!!!!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

I used 1.5 c. w/wheat and .5 c. white flour because I wasn't sure of the texture. I also used only 1.5 tsp. cinnamon and chopped fresh strawberries. I only filled the tins 3/4 full and they needed 25 min. I'm also at 3500 ft. elevation, so that could have something to do with them needing more time. They were just less than gooey, I will try baking them for a few more minutes. Good taste and healthy though.

California Chicken Stir Fry

Great Recipie. Didn't have any pineapple, but found it just perfect (sweetness) because it already had 2 tbsp. of sugar. I think both would be too much, but will try it with the pineapple next time. Stir-fried the garlic, ginger and 1/2 c. sliced onion briefly before adding the chicked and found it gave it great flavour. Also added 1 tbsp. cornstarch & 1 tbsp. cold water (mixed) to the soya mixture.

Mandarin Shrimp and Vegetable Stir Fry

Awesome. I didn't have quite enough marmalade, so I used about 1/4 C crabapple jelly to make up the difference. It was amazing. I also used all the veggies out of my fridge: cauliflower, mushrooms, celery, carrots, onions & broccoli. My new found favourite stir fry sauce.

Broccoli Chicken Divan

Pretty good quick supperand the kids ate it which was a big bonus. I didn't have any cream of broccoli and since a previous rater suggested cheddar cheese soup, I tried it. A bit too cheesey, so I'm looking forward to trying it as suggested.

Easy Chocolate Banana Cake

Nice light cake. I didn't have any sour cream, so substituted vanilla yogurt. To cut down the fat, I used half oil and half applesauce and had a ton of frozen bananas so used two in this recipe. Worked out fine.

Barbecue Ribs

Our new family favorite rib recipe. I sometimes am pressed for time and just marinate the uncooked ribs in the sauce for a couple hours before bbqing. They're awesome.

Slow Cooker Mashed Potatoes

Second time trying this recipie and added 2 tbsp. garlic to water and then another tbsp. to the mashed potatoes in the crock pot. Awesome and received rave reviews at Thanksgiving dinner.

Lemon Delight

I used a 9x12 pan and doubled the cream cheese layer and whipped it with addt'l milk as there wasn't much of it and it was too thick to spread. It was okay, but I didn't think it was that great.

Pork Chops with Blue Cheese Gravy

I did this with pork tenderloin, slicing it just before serving and adding the sauce. I added one tbsp. cornstarch & one tbsp. water to the sauce at the end as it was too runny and would saute onions and mushrooms next time as suggested for more flavour. Great elegant recipe.

GREAT SOUP AND HUGE COMFORT FOOD. I used 1 1/2 c milk and 1 1/2 c half & half, upped the cheese and used 1/2 broccoli and 1/2 cauliflower.

Banana Cake VI

All I can say is WOW. The comments regarding baking temp. may have something to do with elevation. I'm at 3500 ft. and the 275 oF worked great for 1 hr. 15 min. Half the icing recipie was perfect. This will become a family favorite and I would like to try it for muffins.
