Mexican Baked Fish

I used fresh salsa and did not like this at all. Corn chips were mushy in the melted cheese. My husband and kids complained the whole meal.

Scallops Mascarpone

Definetly restaurant quality. I used shrimp and left over linguini and sauted a half cup of finely sliced onions with the garlic/butter/ parsley at the beginning and added some broccoli. I also had about 1 1/2 c. of the cheese, so added milk until I got the consistency I wanted. Excellent recipe

Asian Beef with Snow Peas

Pretty good but still missing something. I doubled the sauce, added 1 Tbsp. cornstarch, a 1/4 tsp. hot pepper flakes, used sesame oil and didn't double the sugar. I also added a ton of veggies including onion, mushrooms, broccoli, cauliflower, celery, carrots red and green peppers, pea pods and bean sprouts. Next time I'll add one more Tbsp. of rice vinegar and double the sugar for the double recipe. Great start.

Manicotti Alla Romana

It was good, but lacked flavour. I will try this again, but will add 1 tsp. each of basil, parsley, oregano, thyme and marjaram to the filling. I will also cut back on the cheese and up the beef to 1.5 lbs.

Insalata Caprese II

You just have to buy bocconcini cheese which is with the ricotta cheese at most supermarkets. Make sure you buy the largest pieces possible because they sell them in small pearls also. Better yet, buy it fresh from an italian market. I chopped the basil so I didn't have to eat the large whole leaves and sprinkled a cap full of balsamic over the plate.

Broccoli Chicken Casserole I

WOW, we couldn't stop eating this; delish!! I browned skinless, boneless chicken thighs because they're not quite so expensive and not as dry. I also added 2 Tbsp. of Mayo, 2 Tbsps of sour cream, and a dash each of Hy's seasoning salt, fresh ground pepper, garlic powder, thyme and an extra 1/3 c. of grated cheese to the mushroom soup mixture. Next time I will saute onions and fresh mushrooms to add to the chicken layer. I made a pan for my neighbor and they raved about it also. This was SOOOOOO GOOOD.

I didn't have the grenadine and upped the juicey to 1.5 oz. and loved it. Tastes a lot like a Pina Colada and will be making this again for sure.

Chipotle Crusted Pork Tenderloin

You're Kidding, Right??? I like spicy food but cut back to 2 tbsp. because my kids don't like the heat and had one extra tenderloin than the recipe called for. It was WAY TOO SPICY and a waste of an expensive cut of meat. If I were to try this again, which I won't, I would only use one tsp. of the chipolte chili powder.

Shepherd's Pie VI

I love this and my husband and kids said it was okay. Wished they shared my good taste/judgement. I sauted all the onion and then just kept one tbsp. back for the potatoes and added extra milk to balance off the drying out from baking. I also added the flour to the cooked beef, then the broth and one pkg. of Knorr beef gravy pkg. I plan on making it again. Make sure you really drain the gound beef.

Red River Beef Stroganoff

This was excellent with a few additions to the sauce but before adding the sour cream: 1 tbsp. Bovril beef flavoring (you could also use one beef boullion cube), 1/4 c. red wine, 1/4 tsp. chipolte chili powder and 1 Tbsp. of tomato paste. I also had to thicken with a flour/water mixture as it was a bit too runny for me.

Savory Meat Loaf

This was a nice family recipe and my husband liked it very much, but the kids did not (not unusual), they're too picky). I'm at 2500' elevation and the consistency was perfectly moist. I'm still on the hunt for the "BEST" meatloaf that my kids will actually eat.

Italian Sausage, Peppers, and Onions

My husband and I thought this was very good, but the kids turned their noses up. I also added a half tsp. on ground anjo chili for a little extra punch. I will definitely make this again, but so that it's not so soggy next time I will saute the veggies and sausage separately and remove from the pan, then deglaze with the wine and cook it down by half before adding everything back in at the end to heat through. I think a tsp. each of thyme and marjoram would be a nice touch too.

Laura's Unbelievable Chicken and Pasta

I loved this recipe with a few minor changes: sauted chicken cubes with a finely chopped onion, a cup of chopped mushrooms and a tbsp. of minced garlic. I did not add the broth, but after cream cheese was melted, added a 28 oz. can of crushed tomatoes and fresh basil which made an amazing rose sauce. Even though my kid have to have theirs without spinach, it's still a winner.
