Slow Cooker Chicken Taco Soup

Easy Mushroom Rice

Almond Wild Rice

Very easy and very elegant dish suitable for company. I served it with Procuitto wrapped chicken breasts stuffed with herbed goat cheese on the BBQ. It was great.

Sausage and Bean Ragout

Fabulous. I doubled the sausage and omitted the beef. Used one 28 oz. can of plum tomatoes that I had immulsified with a hand blender and added fresh thyme, parsley, basil and dry oregano. Simmered until thickened and then added the pasta. Couldn't stop eating it and kids/hubby also gave it two thumbs up. Made it a second time w/ half italian sausage and half ground turkey. Great too!!

Brunch Omelet Torte

This was wonderful, albeit a lot of work in the morning, at least an hour+. Next time I'll make it the night before and leave it in the fridge, putting the egg wash on just before it goes into the oven. Alternately, at least cook your potatoes & onions, grate the cheese and put the pastry in the fridge from the freezer the night before. Got rave reviews from my 8 guests.

Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

Didn't have Apple Jelly so substituted Apricot jam. Didn't have time to make the port sauce but there was plenty of Au Jus and meat was tender and juicy. Got rave reviews.

Delicious Ham and Potato Soup

Very good. I sauted the onions and celery in olive oil until soft and then added the potatoes. I only added 1/2 tsp. salt as the ham is salty and added some fresh chopped thyme. I saved the ham til last b/c I didn't want to boil out the flavor. Just prior to adding the ham, I used my hand blender to smoothen out the soup somewhat with some potato chunks remaining and then added the ham and a cup of grated cheddar cheese.

Pizza Dough I

We really like thin crust, so this was perfect as I was in a time crunch. I did add about 1/4 c. water as it was too dry without. May try the other suggestions when I have more time.

Maria's Pepper Steak

Very good, but I found the red wine vinegar taste a bit over powering. Next time I will cut it back to 1/4 c. and add some oyster or black bean sauce to make up the difference. I added a heaping tbsp. of cornstarch to the sauce and then stir fried all my veggies and meat, then made a well in the middle and poured the sauce into the middle, letting it come to a boil and thicken. Then mixed the sauce in and served over brown basmati rice. I also stir fried broccoli, celery, carrots, zuchinni and 1 tbsp. minced ginger. You could add any veggies you have on hand for a great, full balanced meal.

Baked Ziti I

Very cheesy and my family loved it. I used lite sour cream, skim mozza cheese, added 1 tbsp. minced garlic and 2 tsps of each oregano, basil and parsley. I upped the ground beef to 2 lbs. but not again; it's just too much. There are a lot of preservatives in jarred sauce and next time, I'll make my own with two large cans of italian tomatoes and spices.

Honey Ribs

Was just okay for us; a very expensive cut of meat that ended up with a lot of liquid ( after I omitted the water) and flavor I found to be watered down. Lots of grease on the top of the liquid also. Won't make again this way again but might use the sauce (less the water) for a basting sauce for grilling the ribs.

Cabbage Fat-Burning Soup

You'll need a stock pot for this as I found my dutch oven wasn't going to cut it. It was very thick and good, but does need some more spices. I chopped everything to my liking in my food processor and then sauted all the veggies in 2 tbsp. of olive oil with two cups of sauerkraut and a tbsp. of minced garlic. Also added a tsp. each of thyme, oregano, parsley and dill. Will make it again and double the spices and add cayenne next time.

Pizza Pasta

The peperoni was the magic ingredient and I pre-cooked it as advised by others as well as added fresh basil, dried oregano and minced garlic after draining the fat off the cooked ground beef. I then added the sauce and simmered for about 10 minutes before adding the remaing ingredients. I also added about 2/3 c. moz to the main mixutre in addition to the toppong. My family loved it.

Rotisserie Chicken

Oh my goodness; did I ever get rave reviews from my family and guests. No other BBQ chicken for my family now. I did cut back the salt to 2 tsps. and placed it in a tin foil plate in the center of the BBQ with the middle burner off. Used a digital thermometer and my 3.5 lb. chicken only took one hour. Have tried this on bone in chicken breasts adding the rub half way through and using a digital thermometer to 180 degrees. Yummo, so tender & juicy.

Garlicky Baked Butternut Squash

I thought this was great, but my 12 year olds weren't fussy on it. I mixed butternut squash and sweet potatoes, added about 1 Tbsp. of fresh thyme and it doesn't say what to do with the cheese, but I mixed it in in the last 5 minutes of cooking.

I loved this soup, but should have read the reviews because there was way too much sausage (would have been a 5* with that adustment) and should have halfed it. Otherwise it was great and I used mild italian sausage b/c that's what I had on hand and will up the kale to 3 cups next time.

Lamb and Winter Vegetable Stew

AMAZING!! My family loves lamb, but we have a hard time getting them to eat veggies.......not any more. One son gobbled two helpings and the other finished everything on his first. Mission possible and my new fav stew recipe. I sauted the onion and celery with the meat after about 5 minues, doubled the recipe and tripled the spices.

No Bake Cookies III

A good cookie that my kids & hubby liked and I timed it for 2 minutes once it came to a rapid boil. Took 1.5 hrs. to solidify. Cut back sugar to 1.75 cups, but would cut it back more to 1.5 next time. Great recipe for the kids to learn to make.
