Cheeseburger Soup I

AMAZING. I adjusted the recipe to 11 servings so I could use a 4 cup box of chicken stock and one pound of ground beef. I added two minced pickled jalapeños and used a handful of fresh chopped parsley, 1 Tbsp. Minced fresh thyme and 1 tsp. dry basil. To save some of the fat content, I just added the flour to the sautéed beef and vegetables to make my roux, no butter and a big splash of red wine to deglaze the pan and the milk after a few minutes.

Creamy Au Gratin Potatoes

I tripled the recipe for a 9x13 (3 qt) pan, but only doubled the sauce and it was perfect. I sauted the onion and added two minced cloves of garlic, but will definitely double that and add some oregano and parsley next time. I think a touch of cooking sherry might kick the sauce up a notch. I also removed the foil and topped with fresh breadcrumbs before putting it back in for a final 10 minutes.

Slow Cooker Beef Pot Roast

Wow, this was fabulous and the best slow cooker roast I've made in 20 years. I don't usually brown mine because then I might as well just braise it on the stove top and get the same results rather than dirtying two pots. Jaime Oliver wrote for his scrumptious Jool's favourite stew, that he's done it with and without browning and the latter came out better. When using the crock pot, Iusually do mine on low for 6-8 hours, but it seemed it did much better on high. Next time I'll add sweet potatoes and maybe butternut squash during the last hour. Testing continues.....

Easy Marinated Pork Tenderloin

Just okay. Could have used a kick, maybe a tsp. balsamic vinegar. I even added a tsp. each of chopped fresh rosemary, thyme and minced ginger and marinated for one hour. Needs at least three hours marinating.

Six Can Chicken Tortilla Soup

I had a lot of pulled pork left over from a party so decided to use it instead of the chicken. I followed another rater's comments but made it by the instructions first. It was good but not great. I used fresh medium salsa instead of canned tomatoes and frozen corn. I then added 1tsp. each of chilli powder and cumin which was a big improvement. I then added 2 more cups of broth and the cream of chicken soup. It watered down the flavour too much so I had to add another 1/2 tsp. each of the spices, more salsa and meat. It was very good, but I think next time I'll substitute plain yogurt or low fat sour cream a half cup at a time to taste instead of the soup to cut fat and calories. Very good in the end and great starting recipe.

General Tsao's Chicken II

I loved this recipe and did double the sauce. To cut back on calories and fat (36.5 gms - YIKES), I reduced the sugar by half and only tossed the chicken in the cornstarch, salt & pepper then stir fried it rather than deep frying twice. I will stir fry broccoli, mushrooms, sliced carrots, red peppers, etc. next time and add them in with the chicken at the end for a more balanced meal. AWESOME!

Grilled Bacon Jalapeno Wraps

Loved, loved, loved them. Used low fat cream cheese and wore rubber gloves. I still found that I was coughing during the seeding process. Grilling them adds a flavor like the oven just can't match. Used a grilling basket.

Winter Leek and Potato Soup

I used 1 Tbsp. olive oil and 1 Tbsp. bacon fat and sauted 2 cloves of garlic with 3 leeks [that's how my grocery store sells in a bunch]. Only used 4 potatoes and 4 cups of chicken stock. PERFECT.

Excellent. I cut back the hot sauce by 1/2 as I have teenagers who aren't crazy for spicy food. It was perfect. Next time I'll back them to cut back on the fat and calories.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Chicken Milano

Good basic recipe, but it's pretty bland as is and the cream did not reduce after 20 min. simmering to coat the back of the spoon. I will try this again, add a finely chopped onion and 1/2 tsp. red pepper flakes to the garlic, bump up the tomatoes to 3/4 cup, I'll also deglaze with 1/3 c. white wine, I'll add 2 tsps. cornstarct dissolved in 2 T. water to the cream and bump up the basil to 3T.
