Crustless Spinach Quiche

I poured this in a standard pie crust to make it easier to serve. Instead of Muenster I used a blend of Monterey/Cheddar from Costco - it was a big hit it. Would try it again without the crust. It was very tasty.

Roasted Rack of Lamb

I used herb panko for the crust instead of the breadcrumbs and it was delicious! The Dijon and herb crust really took away from the typical 'gamey' flavor of lamb. This was an easy to follow recipe and everyone liked it very much. I would make it again!

Monkey Bread I

Love this recipe and so easy to throw together - especially easy for brunch. be sure to read the size of the can as they vary between manufacturers to make sure you don't have too much biscuit or the center will be undercooked. I followed a friend's suggestion and just got 3 cans of Grands Buttermilk - too much biscuit - almost raw in the center.

Fluffy Peanut Butter Frosting

My best friend does not like buttercream - but adores peanut butter. I found this for his birthday many years ago and it was a hit! This icing has been a HUGE hit at my office: I am the "cupcake lady" and this icing is my top request, especially with chocolate-fudge cupcakes. Fluffy, wonderful flavor, not overly sweet. I owned a cake business many years ago - so I will tell you it is a bit thick to spread by hand, you really need to use a pastry bag with a large tip. If you really want to spread it, add another Tablespoon of milk. I *only* use whole milk in my icings because the flavor and texture whole milk adds does make a difference. Also, my butter is always room temperature, as is the milk. The temperature of the dairy will impact the creaminess and pipe-ability/spread-ability of the icing.
