Perfect Pumpkin Pie

I have never eaten Pumpkin Pie before (not an 'Irish' thing and very hard to get pumpkin except at Halloween) but gosh was this pie simply amazing!!! So good I went out and bought another 2 pumpkins (I used fresh and just pureed as we would never get the tinned variety here - it wasn't stringy at all) and made another 2 pies and froze them because having to wait another year to make this again wasn't an option!! Simply brilliant, couldn't recommend more. I followed recipe exactly except I cooked the base slightly first before adding the filling. 10 out of 10 for this one!!!

Amish Slaw

Gorgeous slaw and very versatile when it lasts so long - up to 2 wks in fridge. I used half cup of sugar and also apple cider vinegar instead of the ordinary vinegar. I also added thin slivers of red and yellow peppers and grated raw carrot - it made the most beautiful colourful dish. I sprinkled the top with a few toasted almondsaned walnuts although totally optional. Will def make again!

Tiramisu II

Made this recently for a dinner party and it went down an absolute treat. Doubled up on the coffee-dipping mixture - you definitely need to. If you are making a Tiramisu this is the recipe for sure - gorgeous!

Addictive Sweet Potato Burritos

I made this recipe recently as a starter for a dinner party and it went down a treat. However there was way too much chilli powder for the irish palate unfortunately and I had to scramble big time to rescue it when I tried it initially as there was no way we could have eaten it - I actually partially rinsed the beans in a sieve with fresh water to remove alot of the chilli-heat. If making in UK/Ireland (or anywhere you're not used to eating "rocket-fuel" )- I'd suggest you start with 1 tsp of chilli powder and work your way up! Gorgeous recipe though and I will definitely make again (... with a qtr of the chilli powder recommended!!).

Overnight Asparagus Mushroom Strata

This is a fabulous brekkie or lunch and keeps for days. It's even lovely cold in a picnic or to take camping and the ingredients are so adaptable. I added bacon to mine and a selection of hard cheeses grated (just whatever was in the fridge), I also added some smoked paprika, substitued the milk for skimmed/low fat variety & grated some nutmeg on top before cooking. This recipe is delicious and I will definitely make it again and again!

Spicy Garlic Lime Chicken

This recipe is just gorgeous, I made it recently when I substituted the chicken for prawns and served it as a starter, I also added 1/2 tsp of freshly grated ginger and same of garlic (in addition to the garlic powder in the recipe) and all my guests raved about it. I've gotten about 4 e-mails now asking me for the recipe. Such an easy recipe to make (even for a novice like me!) and it is absolutely scrummy! :-)
