Zucchini Crust Pizza

This was fabulous! I took the suggestions of others to heart and salted/drained the zucchini before combining with three eggs. I seasoned the egg/zucchini mixture with basil, salt, and pepper before baking and ended up needing about 2/3c flour. The crust set well in about 10 minutes and I put a thin layer of seasoned tomato sauce on under the toppings to help keep the firm texture. To prevent "tomato puddles" from the fresh toppings, microwave the thin tomato slices on a plate between two layers of paper towels for 30 seconds before putting on the pizza. The end product was excellent and came out of the pan easily.

Quinoa Tuna Casserole

A very versatile casserole recipe. The quinoa can be cooked in the microwave with about 4 cups of vegetable/chicken stock. Based on what we had in the house, we added one can of condensed mushroom soup, a cup of frozen peas, a cup of frozen stir-fry vegetables, half of a sauteed red onion, two small cans of tuna, and a variety of seasonings (cumin, garlic salt, oregano, thyme, basil, cilantro, black pepper, regular salt, chili powder, and a little cayenne pepper), with seasoned panko crumbs on top. The quinoa cooked in the microwave in about 15 minutes, stirring and adding liquid every five minutes. The casserole set nicely and browned around the edges in about 30 minutes. It made a very satisfying meal. Next time I will probably add another can of tuna and would be comfortable adding any vegetables around the house.

Ratatouille Bake

Pico de Tuna

Really good, definitely add the lime juice as suggested by other reviewers. We also enjoyed making it a little heavier on tomatoes and tuna. Very nice with wheat crackers.

Crazy Chicken Marinade Grilled Chicken

Good for fish or chicken. Can be done on foil in oven, as well. I recommend cutting the chicken breasts in half lengthwise and tenderizing with forks for the best absorption of flavor

Grilled Vegetable Quesadillas

This was great! We used a little more of the pepper mixture per serving than suggested, substituted the green onion for red, and served with beans, guac, and salsa on the side. If your grill has bars that are too wide for grilling the veggies, they do very well on foil.
