Marinated Flank Steak

We enjoyed this very much. I marinated the steak for a day and a half, and it came out very tender and moist, and smelled wonderful when it was cooking. It also tasted great cold the next day.

Apple Raisin French Toast Strata

What a delicious dish! After reading the reviews, I melted the cream cheese in the microwave, and tossed it with the first layer of bread cubes, so that everything was coated. I didn't have raisins, so I added some dried cranberries that I had on hand, and sprinkled the top with cinnamon and sugar. I baked it for an hour and a half, which was perfect. I will definitely be making this again.

Chocolate Bar Fondue

Yum! We made this for New Year's Eve, and I followed the recipe to a T. The chocolate was so creamy and smooth. We dipped strawberries, bananas, kiwis, marshmallows and pound cake. The only thing I wish I had done, was cut the recipe in half. There were only five of us, and I think that we'll be eating fondue for a week (not that that's a bad thing!).

Broccoli Cheese Soup

This was very good. I doubled the broccoli and cheese, and it was too cheesy for me (but my husband loved it). I would recommend doubling the broccoli, but only use 1½ lbs of the cheese. It makes a LOT of soup, so unless you're feeding an army, have some freezer containers handy for a quick mid-week dinner.

Ginger Glazed Mahi Mahi

This was so delicious! I only had 2 mahi mahi filets, so I also used salmon. We actually liked the salmon better. The sauce turned out so wonderfully thick and sweet, that I really wished I had doubled the amount to pour on the rice. I can hardly wait to make this again, and would not hesitate using it with chicken, or even better, on a pork tenderloin. Wonderful recipe!

Restaurant-Style Zuppa Toscana

I love this soup. It's so easy to make, and it results in a hearty, flavourful dinner. I took the sausage out of it's casing, and fried it up with the diced bacon. I think it saved a lot of time in the prep work. I also only added light cream rather than whipping cream, and it was still delicious.

Mexican Baked Fish

Ok, I do not usually provide a review, if I make a major change to an ingredient, but I felt that in this case, it wouldn't make a huge difference. Originally, I had intended on using fish for this, well, fish recipe. I ended up using chicken breasts, because the fish wasn't looking too appetizing at the store. Other than that, I stuck exactly to the recipe as written. It was fantastic and easy. What made it better, was that my very picky (understatement) 8 yr old, ate every last bite and then asked when I was making it again. For the record, I'll be making it again next week!

Slow-Cooked German Short Ribs

This was fantastic. I couldn't get beef short ribs, so I used pork short ribs instead. I didn't care for all the little bones, so next time I'll try a different cut of meat. The sauce was so delicious! We made garlic mashed potatoes, and poured the sauce all over them. Fantastic meal.

Fried Cabbage II

This was excellent. I served it with corned beef, and I would have eaten it on its own. The only change I made, was I only used a tsp of the vinegar, as I thought a Tbsp might be overwhelming. The tsp added just the right amount of zing. It disappeared very quickly.

Breakfast Casserole II

This was a wonderful casserole. Like some others, I fried some diced onion up with the sausage, and then layered everything before pouring the egg and soup mixture over everything. Mine was completely cooked and set up after an hour, and was not in the least bit mushy. Everyone loved it and asked for the recipe. It was really tasty and the texture was perfect.

Apple-Cinnamon Farfel Kugel

This was wonderful! The smell when it was baking, filled my entire house with cinnamon. It's so easy to make (if you have a food processor), and it was fantastic. I doubled the recipe and baked it in a 9X13 pan for the same amount of time and it turned out fine. I wouldn't wait until Passover to make this dish again.

Garlic Cheddar Chicken

Fantastic recipe! The chicken came out wonderfully moist and tender, and the breading had excellent flavour. Not the healthiest way to prepare chicken, but definitely worth the extra calories!

Broiled Tilapia Parmesan

We loved this recipe. Very easy to make, and incredibly tasty. I read the reviews and based on some of them, made more of the sauce, which we ate on the side with the fish, and mixed in with our rice...yum! Not a kid friendly dish, but hey, in my house, not much is.

New Red Potato Salad

How can something so simple, be so delicious? After all the compliments, I have decided to claim this potato as mine (sorry DWAGNER!) ;) I used new red potatoes and just quartered them. The second time I made it, I had no celery, so I chopped up some sour dill pickles, and really enjoyed the flavour. This is going to be my only potato salad recipe, as in my family, traditional potato salad is the only way.

Rib Eye Steaks with a Soy and Ginger Marinade

This was a wonderful marinade. I used it with flank steaks, and marinated them overnight. They turned out so tender and juicy. I wouldn't use dried ginger...go for fresh, because I think it would really change the recipe.

Surprise South Beach Mashed 'Potatoes'

As the recipe is written, I'd give it 4 stars, but tonight I used my turkey bacon allowance, cooked it, chopped it and added it to the cauliflower. It was delicious! My 4 yr old even asked for seconds.

Grilled Orange-and-Bourbon Salmon

I made this recipe several weeks ago, and forgot to rate it. I didn't have bourbon, so I used some whiskey instead. I was a little worried while it marinated, as the whiskey aroma was very strong, but the fish turned out wonderfully. It was very moist and tasty, and we all loved it.

Calico Squash Casserole

Holy moly, was this ever good! I also skipped the boiling process, and sauteed the veggies until tender crisp. I also skipped the pimentos, as they didn't appeal to me, and I knew the kids would refuse to eat it. It was the best way we've used our zucchini so far. I would have eaten it as a main dish. My younger one wouldn't eat it, and my 9 yr old ate it, but didn't run for seconds. My husband and my mother both ate seconds and there was hardly anything left. Thank you for sharing this recipe!

Honey Baked Chicken II

This was really good. I was looking for something very simple for our Rosh Hashanah dinner, that both adults and kids would like. This was it. I used chicken breasts, left out the curry (knew the kids would hate it), and used Dijon rather than prepared mustard. It smelled wonderful when it was cooking, and the end result was delicious.

Black Bean and Corn Salad II

Everyone loved this salad. I added slightly more lime, and after tasting the dressing, decided to add some cumin and oregano, which gave it a nice kick. I thought I'd have tons left over, but alas, it was all gone by the end of the meal. This will be great when the weather gets warm.
