Banana Banana Bread

Fantastic recipe! I followed another reviewer, and turned these into muffins, since I don't have a loaf pan. They made 18 muffins, which are like little, personal banana breads. I added a little vanilla to the batter, and sprinkled each muffin with a cinnamon-sugar mixture before I put them into bake. They came out super moist and very banana-ee (that's a word, right? :P ).

Unbelievable Rolls

Excellent recipe! So little work, and you end up with tasty, fluffy rolls. I did get 16 rolls, but they were huge! Everyone loved them, and I can't stop nibbling on them today. I guess it depends on your oven, but mine were done in 10 minutes when I baked them at 375. They were perfect when baked this way.

Lemon Bundt Cake

I am so glad I tried this recipe! At first I was hesitant, because the addition of soda sounded strange, but I had all the ingredients on hand, so figured I might as well try. It was SO moist and lemony! I decided not to try a glaze, and I'm glad I didn't. It was perfect as is. I think the glaze would have made it too sweet and sticky, but that's just my own personal taste. I will definitely be making this again.

Pineapple Chicken Tenders

So easy, and so good. I marinated the chicken overnight, and the skewers came out very moist and flavourful. Everyone loved them, including the kids.

Broccoli and Tortellini Salad

Wonderful salad! I didn't blanch the broccoli, only because I had so much else to cook, it would have meant doing one more thing. I took the advice of the others, and doubled the dressing. I put the first half on the salad the night before, and the rest about half an hour before serving. I also omitted the raisins, because no one really likes them. I used tri coloured tortellini, so it was a very pretty salad, as well as delicious.

Caesar Salad Supreme

Finally, a Caesar salad made from scratch! This was absolutely delicious. For all those who skipped the anchovies...why?? Anchovies add flavour but it doesn't make the dressing taste fishy. Just watch the size of the garlic cloves you use, because mine were quite large, and the taste was very strong. You don't need to thin the dressing, just keep tossing until the lettuce is totally coated. Next time I would skip the croutons though. It was a little time consuming, and they were no better than store bought.

Watermelon Fire and Ice Salsa

Am I ever glad I tried this! I was feeling like doing something different, and came across this recipe. After reading the reviews, I figured I'd give it a whirl. It was fantastic, and everyone was really surprised at how good it was. The watermelon is so refreshing and different. I doubled the lime juice, and served them with the lime tortilla chips. Excellent recipe!

Carla's Fruit Dip

I originally made these with kids in mind, and figured the adults would be eating their fruit plain. I was wrong. Grown-ups and kids were digging into this, including myself. Especially good with strawberries!

Bacon Water Chestnut Rolls

Delicious! I tasted the sauce as I was mixing it, and wondered whether this was going to be eaten. After plating them, I tried the first one, and just loved it. Everyone loved them, and even though I made more, they were all gone in no time. I used the whole water chestnuts, and it was such a lovely texture. Will definitely be making them again.

Garden Veggie Pizza Squares

This was excellent! Like other reviewers, I used slightly less than half a packet of the ranch dressing, and it was plenty. I also used a large spoonful of mayo, to make it more spreadable. I was hoping for some leftovers, but these were gobbled up in no time. Everyone commented on how good it was. I will definitely be making this often during the summer.

Spicy Bean Salsa

This was really good. The only changes I made, were using fresh jalepenos (I used two, which wasn't enough, in my opinion), and fresh garlic. It made a ton! Even my 7 yr old liked it, so it must be good.

Banana Nut Bread II

It certainly doesn't get easier than this. All the ingredients at hand, no bowls to clean up and you get a wonderful banana bread out of it! My son is allergic to nuts, so I used ½ a cup of milk chocolate chips. I also used 1/3 of a cup of milk and 1/3 cup of sour cream, since I had some in the fridge. I also let it bake for the entire bake cycle, which on my machine is 87 minutes, and it was just baked through. Simple and delicious.

Marinated Flank Steak

We enjoyed this very much. I marinated the steak for a day and a half, and it came out very tender and moist, and smelled wonderful when it was cooking. It also tasted great cold the next day.

Black Bean and Couscous Salad

What a wonderful salad. I made it for company last night, and everyone raved. I only used 3 green onions, which I thought was plenty, and I did use both cans of black beans. I thought some diced cucumber would go nicely in it next time. It was refreshingly light, and would make a great addition to any meal on a warm summer night.

Cornish Splits

These were very good and quite simple. I agree they need a little sprucing up as far as flavour goes. I used 3/4 tsp of salt, and 1/4 tsp of garlic powder, which was pretty subtle. I baked them for 15 minutes, but found the tops a little tough for my taste, but inside they were soft and fluffy.

Kalamata Olive and Garlic Bread

I was rather skeptical while making this bread. It was extremely easy, but when I began kneading the dough, the entire filling burst through and all over my counter. I just managed the get the dough into a ball, pressed some of the filling onto the surface of the dough, and decided to try baking it anyways. It was wonderful! My husband, myself and our two young children polished off most of the loaf at dinner, and finished the rest for breakfast the next morning. Next time I make it (which will be soon), I'll just knead it altogether, and not worry about keeping the filling in the middle. Do try this delicious bread. We ate it with souvlaki and a Greek salad.

J.P.'s Big Daddy Biscuits

It does not get easier than this! I made the dough ahead of time and just stored it in the fridge until it was time to bake them. They baked up so light and fluffy, and the whole family devoured them. They were great right out of the oven with some butter, but I liked them even better at room temperature, with some butter and honey. Made them last night, and I was asked to make them again tonight, so off I go!

Award Winning Peaches and Cream Pie

Can we give a higher rating?? This recipe was outstanding! I followed previous reviewers' advice and doubled the recipe, and baked in a 9X13 pan. It was very loose at 35 minutes, so I baked another 10. I chilled it for roughly 5 hours, so it was nice and cold when I served it. It was so fantastic, that my husband and I took second helpings when the kids were in bed. I think it would really wonderful using a variety of different fruit, but the peaches were perfect!

Honey Duck

I thought this was just ok. I basted every 15 minutes for the 2½ hours. The skin never got crispy, despite many fork pricks. The flavour was nice, but not outstanding, although both my kids devoured it. I think I might try and find another recipe.
