Italian Sausage Soup

A wonderful, flavourful, hearty soup. Unfortunately, I forgot to add the spinach, because I did mine in the crockpot, and figured I would add the spinach the last half hour of cooking, but ended up forgetting it altogether. It was still delicious, and went wonderfully with the Unbelievable Rolls from this website.

Milky Tea

Really nice drink, and perfect for kids! It's rainy and miserable here today, and my 8 yr old son came home from school all wet and cold. I made this for him, and he just loved it. It has a frothy type taste to it, and I can see that it would be very soothing when feeling under the weather. Thanks for sharing, Danielle!

Oatmeal Peanut Butter Cookies

These are very good cookies. I decided to make them this afternoon, since I had nearly all the ingredients. I did substitute the shortening with unsalted butter, since I never have shortening in the house. They do spread out quite a bit, so watch how many cookies you place on the baking sheet. They were large, thin, golden cookies which were crispy and chewy. I'm not a huge peanut butter cookie fan, but these were delicious. You must have them with a cold glass of milk!

Down Home Macaroni and Cheese

I decided to make this as a treat for my two boys. It's very simple and the results were very good. It was extremely cheesy and creamy, and we all enjoyed it. It's not something I would make every week, as it's very rich, but it is true comfort food. I used a Tex-Mex cheese blend (with the jalepenos), and it gives it a great kick without turning the kids off. I did leave off the breadcrumbs, since I knew my kids wouldn't like it.

Chickpea Curry

By far, one of my favourite recipes from AllRecipes so far! I only used ½ tsp of cayenne (thankfully), used 1 tsp of ground cinnamon and added 2 diced tomatoes and a bag of baby spinach. This was so delicious! I served it with basmati rice, and it made a perfect meal. I can hardly wait until lunch tomorrow, so I can finish the leftovers!

Peach Cobbler II

This was so good! I followed others' advice, and reduced the sugar to one cup, and only added on cup of boiling water. I also added a little cinnamon to the batter because I love cinnamon and never think you can have too much. My son doesn't like the skin of peaches, so I only had nectarines in the house, and they were perfect..I didn't even bother peeling them. I really think you could use a variety of fruits, particularly berries. Thanks for sharing this recipe!

Easy Slow Cooker French Dip

These were quite good, and very easy. I do agree that they need a little something, but I don't know what. We melted provolone on top, which was delicious. I would make this again, but perhaps add some more seasoning. My whole family did enjoy this meal.

Cabbage Roll Casserole

So much easier than make cabbage rolls, and it tasted great! I halved the recipe, but still used a whole can of tomato sauce. My husband and I loved it, but my kids were less than thrilled. I also used brown rice and it was fine. Great recipe!

Corn and Zucchini Melody

What a wonderful sidedish this was! My whole family enjoyed it more than the pork roast I served it with. I was too lazy to use corn from a cob, so I just thawed some frozen corn, and I accidentally bought Colby cheese, but it tasted great. I also diced up the bacon before cooking it, as I find it easier than crumbling it afterwards. This will be a regular dish from now on.

Chocolate Zucchini Bread I

Yum! I made this in a bundt pan, and baked it for 75 minutes. I also used a combination of semi and milk chocolate chips. It turned out moist and delicious. Definitely more of a cake than a bread, and no kid will ever suspect there is zucchini in it, especially if you peel it and grate it on a fine grater (squeeze the excess moisture out).

Eggplant Parmesan II

This was outstanding! I used only two eggplants and I did salt them ahead of time and baked them for 10 minutes, as others suggested. It was so delicious that I had to put my plate in the dishwasher to keep myself from eating it all. What's more unreal, is that my picky 8 yr old son LOVED this! He grimaced when I told him what I was making, and he ended up eating three helpings, and asked if he could have leftovers for lunch tomorrow. Dolores, I could kiss you!

Zucchini Casserole II

This was very good. The only thing I might do next time, is to cook the onions a little before adding them to the casserole. I liked the taste, but for those who aren't wild about onions, it was a little strong. I also liked it a lot better the next day. A great sidedish, and a nice way of using up zucchini that threatens to take over your entire backyard!

Dave's Mocha Chicken

I'm so glad that I decided to try this, despite the fact that there was only one review. It was fantastic! I loved how the sauce thickened as it simmered, and it tasted great over rice. Next time I'll try this with chicken breasts, but I think it would be fabulous as a sauce for chicken wings, given how thick and caramelized the dish becomes. Thanks for sharing, Dave!

Candied Kielbasa

This was so good! I read that some people thought it could use more horseradish, but rather than doing that, I used 1/4 cup ketchup and 1/4 cup of chili sauce. Mine didn't really thicken, but it was still wonderful. I served it with basmati rice, and it was such a delicious dinner. Thanks so much for sharing this recipe, Nancy!

A wonderful, light summer pasta. I used tomatoes from my garden, so it was even more refreshing than I had anticipated. The only thing I will do differently next time, is to sauté the garlic in the oil until just softened a little, and once cooled, add it all to the tomatoes. The only reason I would do this, is because the raw garlic was just too sharp for my kids. I also didn't use much more than 1/4 cup of olive oil. Great recipe!

Grilled Pork Tenderloin

Who would have guessed that such a simple recipe, could be so wonderful? I used three tenderloins for this recipe, and I cannot remember ever having such tender, moist pork in my life! When my husband was slicing it, he asked why on earth I had bought so much meat for us, but low and behold, not one slice was leftover. Even my 7 yr old had three helpings! I am so glad I tried this, and will be making it often.

Chocolate Banana Cream Pie

This recipe gets 5 stars just for being so quick and easy! I would have loved to have used a graham crust as other suggested, but alas, the prepared ones were sold out. It was still great in a regular crust. I used three bananas which was great. Next time I would double the chocolate and perhaps substitute the vanilla pudding with either chocolate or banana. Great pie!

Sophie's Zucchini Bread

I thought this was quite good. I had no loaf pans, so I had to bake it in a bundt pan, but it turned out just fine that way. I would have liked the addition of nuts, but my son is allegic to them. My older kids really enjoyed it, but my 3 yr old saw the zucchini, and wouldn't eat it. I can see this will come in handy when we become overrun with zucchinis!

Zucchini with Farfalle

What a delicious way to use up zucchini! I made this for company, and everyone raved over it. I doubled the recipe because I was feeding seven, and there was tons left over. I didn't really change anything, with the exception of using a little more cheese. The only thing I would do differently next time, would be to dice the zucchini, because frankly, slicing them into a julienne was really time consuming.

Burrito Pie

This was so fantastic! I didn't change much, other than adding a packet of burrito seasoning to the meat. I halved the recipe and made it in a 9X13 pan, and it fed six of us with a huge piece leftover. Everyone raved about it, including all my kids :O My three year old even had two helpings! Great served with a little sour cream. Mmmmm!
