Sangria! Sangria!

This was SO good! The best sangria I've had. We made o.j. cubes so it wouldn't dilute the flavour and it was perfect! I also used Sprite rather than club soda. Will definitely make it again this summer.

Rhubarb Cake I

This was so delicious! I ran out of white sugar, so I used 1 cup of brown sugar and a half cup of white. It was so moist and wonderful, and was even better the next day. I can hardly wait to make it again!

Ultimate Twice Baked Potatoes

I served these to company last night, and they got raves all around! I had to double the recipe, because I just knew everyone would want more than one half (yes, we're pigs!). I only added a touch of milk, after reading the other reviews, and that's really all it needed. I think 1/2 cup would have been too much. I stirred the bacon right into the potato mixture, rather than sprinkling it on top. Also, to make scraping out the potatoes easier, and to avoid breaking the skins, use a grapefruit spoon! You can carve the outline of the amount of potato you wish to scrape, and then you can gradually scrape the potato from its skin with the grooves. It worked like a charm!

Fragrant Chicken Curry

This was quite good and very easy to make. I added a slurry of cornstarch and water to the mix, so it would thicken up some more. I couldn't help but wonder what it might be missing.

Andrea's Pasta Fagioli

This was excellent. After reading the reviews, I only added 1/2 a lb of the pasta, and I'm glad, because it really does absorb all the broth. I also added ground Italian sausage to make it heartier for a main course. The kids hated it (too bad!), but we thought it was outstanding, and it couldn't have been easier to make.

Coconut Poke Cake

This was delicious! I also couldn't find cream of coconut, so I bought a premium brand of coconut milk, and spooned the thick cream off of the top. I also accidentally bought low fat condensed milk, and it was really very good (who'd'have guessed??). It was so easy to make, and I would easily serve it if having company. Luckily, we're not expecting any company, so we get to polish off the rest by ourselves!

Grilled Spicy Lamb Burgers

These were excellent. I couldn't fine fresh oregano, so I just used 2 tsp of dried. We had hamburger buns, so we slathered them with tzatziki and crumbled feta. The only thing I would do differently next time, is to double the recipe. The burgers were kind of small, or we're just big eaters!

Lime Chicken Soft Tacos

These were so good! I followed the recipe as written (ok, I did replace the oregano with fresh cilantro) and they were delicious. Next time I'm going to try using chicken thigh meat because I find chicken breast rather dry. The whole family loved them, and it filled the kitchen with wonderful aromas. ETA: tried chicken thigh meat the second time -- Way better!!!

Cream Corn Like No Other

Slow Cooker Beef Stew IV

I was a little nervous about the stew being bland, so I followed some of the other reviewers' advice. I used beef broth instead of water, and added some thyme, more salt and a bay leaf. Everyone loved it! The texture was perfect...thick rather than soupy. Next time I'd add more carrots and some peas, but there will be a next time.

Chicken Paprikash II

This dish was delicious and easy! The only thing I adjusted, was the crushed red pepper, which I only added about 1/2 tsp, since I was serving it to my kids. I just bought drumsticks and thighs, and the meat was falling off the bones. I served it with one of the reviewer's spaetzel recipe. I can hardly wait to eat leftovers today!

Pumpkin Apple Streusel Muffins

These are very yummy muffins! I stuck to the recipe word for word and they turned out perfectly. The batter was much stiffer than I had anticipated and worried they wouldn't turn out, but they did. Such a nice fall recipe!

Angel Chicken Pasta

This was so yummy. Instead of breasts, I used boneless, skinless chicken thighs, cubed and browned them until cooked. I sauteed them with sliced mushrooms as well. Then when I finished the sauce, I added the chicken and mushrooms back into the pan and just simmmerd everything while the pasta cooked. I'm not fond of angel hair, so I used fusili instead. I'm glad I did, because the pasta caught all that delicious sauce.

Homemade Tomato Sauce I

This was excellent. I used tomatoes from our garden, so it tasted incredibly sweet and fresh. I left out the wine and added a little salt and pepper and it was just wonderful. I also pureed all the veggies so it was more kid friendly. I'm going to use all our extra tomatoes to make batches to freeze for over the winter. Thanks for sharing!

Rich and Creamy Tomato Basil Soup

It's amazing how such simple ingredients, can create such a decadent soup! I doubled the recipe and used fresh tomatoes from my garden. I didn't bother peeling the tomatoes and just squeezed as much pulp out of the tomatoes as I could. My 9 yr old who doesn't even like tomatoes, loves this soup. Now I have leftovers to eat for lunch this week!

Angie's Dad's Best Cabbage Coleslaw

Delicious! Tastes just like what you'd get in a good restaurant. I cheated and used 2 bags of cole slaw mix, and I ran out of vegetable oil, so I used half vegetable and half olive oil. Other than that, I stayed true to the recipe. I let it sit three days before eating and drained it before serving.

Clam Sauce with Linguine

We all loved this. I did make a few changes though. Instead of 1/2 a cup of butter, I used 1/4 cup of butter, and a 1/4 cup of olive oil. I also doubled the garlic because we love it. I undercooked the pasta by a minute or two, and added some pasta water to the sauce, to thicken it up a bit. Then I added the pasta to the sauce and cooked it for a few minutes to absorb the sauce better. I would definitely make this again.

Restaurant-Style Coleslaw I

This was great coleslaw. I did serve with a slotted spoon to avoid excess sauce from going onto the plates. We served it with pulled pork sandwiches, and everyone loved it. I accidentally left out the onion, but most people appreciated that fact.
