Chicken and Stuffing Casserole

Really easy, and everyone loved it. I bought a bbq chicken at the grocery store, and just shredded the meat with my fingers.

Old Fashioned Potato Kugel

I thought this was really, really good. It got some mixed reviews, but it may be because I used two very large onions. I thought it resembled a creamy latke.

Yummy Honey Chicken Kabobs

What a great idea! Tried this last night (made them in the oven), and the kids and I loved them! Much tastier than graham crackers, and because they're so rich, you're not as tempted to eat more than one.

Carrot Cake III

This was fabulous! I stuck right to the original recipe and it came out perfectly! It was moist and flavourful. I did leave out the nuts, due to an allergy. The only thing I changed, was by using a different frosting. I used the allspice cream cheese frosting fromt the site. My 11 yr old who doesn't like cake, requested that I make this for his birthday. Excellent recipe!

Fluffy Pancakes

Excellent pancakes! I mashed up three bananas and added them to the wet mixture. I sprinkled chocolate chips on the pancakes before I flipped them. They were extremely fluffy, but it's important to only flip them once. I tripled the recipe for six people and we only had maybe 10 leftover which people ate cold later on.

Too Much Chocolate Cake

Excellent and easy! I didn't bother with a glaze or powdered surgar and everyone devoured it. I'm not a huge baker, so this recipe was perfect for me. I can see how versatile you could be, depending on flavour of cake mix/pudding you use.

Pumpkin Turkey Chili

This was amazing! I agree that on its own, it's a little bland. I added a small can of corn and a can of black beans, rinsed. I also used about 3 palm fulls of chili powder, a tsp of ground coriander, a tsp of ground cumin seeds and about a 1 tsp of cayenne pepper. Thick, hearty and delicious!

Jalapeno Popper Spread

This was SO good! I decided, despite the reviews of others with tips on enhancing the recipe, to go with the exact recipe as written. It turned out absolutely perfectly. Tasted just like a jalapeno popper, even with the Parmesan cheese, which was freshly grated. Served it with slices of french baguette. The only thing I did differently, was to bake it at 300 F for half an hour in a glass 9x9 square baking dish. As it cooled down, I just popped it back into the microwave to re-heat it. Everyone loved it and asked for the recipe. My suggestion is, do not stray from the original recipe until you've at least tried it. I wouldn't change a thing!

Knedliky - Czech Dumpling with Sauerkraut (Zeli)

I can finally make my grandmother's dumplings! I followed another reviewer's advice, and left out the baking soda. I also only used 2 eggs. My grandmother always shaped her dumplings using her wet hands, so that's what I did and it worked out perfectly. As for the sauerkraut, I did my grandmother's. She always made hers with caraway seeds, chopped onions and brown sugar, so that's what I did. Made a pork roast in the slow cooker with the zeli and I had a childhood dinner I begged for! I don't have a dumpling slicer (but my grandmother is giving me hers), so I used thread to slice them. The leftover dumplings were cubed and I made another childhood favourite....egg dumplings. They were perfect!

This is a fantastic soup! It's so versatile, because you can use whatever veggies you have on hand. I didn't have celery, so I just used more carrot. I threw in a can of chickpeas that I had on hand. Even the kids really liked it. I halved the recipe and still had way too much for a family of 5!

Spaghetti Pie III

This was a hit in my house. I followed some other suggestions and added butter and parmesan to the spaghetti. I also used a red pepper instead of green (personal preference) and added fresh, sliced mushrooms. Also used whipped cream cheese and chives so I didn't have to chop green onions. It was creamy and filling and very comforting.

Cavatappi with Spinach, Garbanzo Beans, and Feta

This was so simple and delicious! I forgot to buy lemon, so I used some white wine vinegar and it was fine. Even the kids liked it. I wouldn't have minded an addition of grape tomatoes or cherry tomatoes sliced in half. Would have made it pretty and would taste great.

Mushroom Orzo

This was so delicious! I followed other suggestions and used stock instead of water, real garlic and regular onions. It was so creamy and comforting! The cremini mushrooms add a yummy meaty quality to the dish. Will definitely be making this often.

Honey Glazed Ham

Made this for Christmas dinner and we really liked it. I did what others suggested and used brown sugar rather than corn syrup, and because we're not huge clove fans, I used ground in the actual glaze. It didn't have a huge taste, but I think if I had used a spiral ham, the flavour would really have come through better.

Garlic Prime Rib

I decided to make this for our New Year's Eve dinner, and what a way to bring in the new year! I took it out at 138 degrees and let is rest for 20 minutes. Gave the perfect amount of red and more cooked meat for those with different preferences. Served it with crockpot mashed potatoes so I wouldn't stress over having sides done before the roast and it worked out perfectly!

Downeast Maine Pumpkin Bread

These were probably the best muffins I've made. I used half butter, half oil, but other than that, stuck with the recipe and made them into two dozen large muffins. They had to bake for about 40 minutes, but resulted in moist, delicious muffins with a beautiful colour. They were a huge hit at my New Year's brunch! Next time I make them, I'm going to try and make them a bit healthier by using whole wheat flour and unsweetened applesauce instead of the butter/oil. I'm sure they will still be fantastic.

Joy's Prizewinning Trifle

This is now one of my favourite desserts I've ever made. Very few changes...I did soak the bananas in pineapple juice as suggested by other reviewers, I tore the cake into cubes rather than slicing it and decided to use banana pudding (which I did prepare, and glad I did)instead of vanilla. It was delicious! Everyone raved over it.

Big Soft Ginger Cookies

These are wonderful! I'm not a huge baker, but come the holidays and I feel as though I have to bake one batch of cookies for Santa. This recipe was SO easy. I didn't even have the gooey mess everyone is talking about, so rolled them right away. I tossed each ball in a little bowl of sugar, which made it very easy. I also used oj in place of the water, but other than that, I stuck right to the recipe. They are so pretty and taste delicious. My house smells so good right now!
