Beef Wellington the year 1983 , ALso I was helping My daughter with her junier high creampuffs.The first batch looked like pancakes , I cajoled her into a second batch. They were worthy of being on the cover of Gourmet magazine.Tragedy and a triumph !The year a very long time ago.

Terry's Texas Pinto Beans
Made recipe as written .Except I added a ham hock . The beans were soso the first day but after sitting in the fridge for three days they were FANTASTIC!!I am making them again this weekend, for dinner on wednesday.

Christmas Breakfast Sausage Casserole
I needed a breakfast that would travel ! I did revamp with onions, sweet peppers, and half and half Plus Texas toast!and I added Jalapeno peppers to half the pan . Everyone loved it !

Tasso Ham
I smoke a lot of pork shoulders for pulled pork . I tried this recipe following exactly for time and ingredients . It was a FANTASTIC change ! Everyone loved it !
