Apple Bread

I made this tonight after purchasing 50 gala apples from someone who was selling fruit as a fundraiser. As Jillian suggested, I did half white sugar and half brown and added a generous teaspoon of vanilla extract and nutmeg. It turned out heavenly! I used an apple corer/peeler tool and chopped the apples into smaller pieces from there. I didn't puree the apples in a mini food processor like I do for zucchini bread; I left them chunky and it turned out amazing. I made two loaves as the recipe is written, as a reviewer recommended I baked at 350 F for 1 hour and it was perfect. Thank you so much for the wonderful recipe, I will definitely be making this again!

Vegetable Pasta Salad II

I made this for the family this evening and doubled the recipe since I had 6 adults to feed and I had plenty of rotini pasta. I had some green peppers, tomatoes and eggplant from our garden that were amazing in this. I didn't have any zucchini so I omitted it. I used freshly grated Parmesan cheese rather than feta and balsamic vinaigrette in place of the Italian dressing since that is what I had on hand and it turned out just fine. This was a hit with the family, I will make it again for sure.

Christmas Broccoli Salad

I made this for Christmas dinner this year, and it is indeed excellent. In the future I will probably leave out the bacon so my vegetarian guests could eat it. Easy to make as well. I will be making this one again for sure!

Gluehwein

As many others have previously said, I too have fond memories of drinking Glühwein at many a Christkindlesmarkt when I was stationed in Germany. I recall being so surprised that I liked it because I typically drink Spätlese and find red wines such as Merlot too bitter. I made this with Shiraz, as a few reviewers suggested, to keep things on the sweeter side. I also used orange juice in place of water as many reviewers suggested. I think using a cinnamon stick and whole cloves are genius as ground versions would overwhelm it. I have tried many other Glühwein recipes and been sorely disappointed, however, this tastes just like the Glühwein I remember. Thank you, Else for sharing!

Byrdhouse Mushroom Barley Pilaf

I made this for Christmas and it was heavenly! I added Roma tomatoes and another reviewer suggested. I made this a day in advance then transferred to an electric food warmer an hour before dinner. Next time I will make this with low sodium vegetable broth so that my vegetarian guests can eat it. This one is a keeper!

Maple Glazed Sweet Potatoes with Bacon and Caramelized Onions

I made this for Christmas and it was my favorite dish of the evening! I was out of bacon and had vegetarians as guests anyway, so I made this without the bacon and it was still heavenly. The I used a lot of pepper before baking on both sides of the potatoes. The onion and syrup made a nice contrast. I will make this again for sure!

Merry Berry Salad

I made this for our Christmas dinner and it got rave reviews from our guests. It was super easy to make! I loved the cranberry dressing, I left it on he side so people could add it to the salad or not if they wanted. I also put three different cheeses people can use with it; fresh shredded Parmesan, crumbled feta and blue cheese.

Awesome Sausage, Apple and Cranberry Stuffing

I made this for our Christmas dinner and it was by far the best stuffing I have ever eaten! I made it the night before and placed it in an electric buffet server when it came meal time. I used honey crisp apple and omitted the liver. I also used low sodium chicken broth rather than turkey stock and added one cup since it wasn't being stuffed into a turkey. I will make this one again for sure!

Spiced Baked Apples

I made this as a side dish for Christmas. I had 17 guests arriving and used 10 Gala apples. As another reviewer mentioned, I cut the apples in half and placed them face up in two 11 x 9 casserole dishes. I put the raisin and nut mixture in the middle of each and poured the sugar mixture over each. I wrapped them tightly with foil as another reviewer mentioned and they were done in 30 minutes. They were a huge hit, everyone was raving about them!
