Downeast Maine Pumpkin Bread

Love this recipe. I use it for loaves and for muffins/cupcakes. I like to make it a touch healthier but cutting the sugar down to 2 1/4 cups, switching the eggs out for flaxseed meal, and replacing half the oil with applesauce. These changes bring out the spices a bit more.

Chunky Vegetarian Vegetable Soup (Fast and Easy)

I have made this a bunch of times and it is a favorite now. So healthy and satisfying, and great to freeze and reheat. I add extra kale, skip the okra, and add cayenne to boost the flavor.

Zucchini Saute

I was surprised how good this was. Made a few changes: increased tomato to match zucchini. Yellow onion instead of red. Added garlic with the onion. Left out mushrooms (but I'm sure they'd be great in this!). Added parmesan at the end and tossed in some pasta. DELISH!

Moist Chocolate Muffins

These are addictive and very easy to make. I added an extra 1/4 of the ingredients and it made 2 dozen. To use what I had on hand, I substituted flax for the egg and applesauce for the yogurt (I bet the yogurt would have been more moist though). I also substituted rice bran oil for vegetable oil and half raw cane sugar. I also added a pinch of salt. Next time, I may use coffee as some suggested to enhance the flavor.

Colombian Lentils

Very tasty. With some changes, this is a 5 star recipe. It definitely needs more liquid and time to cook, if you don't want hard lentils and potatoes. I used 1 cup vegetable broth and 1 1/2 cups water, and added carrots, garlic, thyme and cayenne pepper. Next time, I might try this in the slow cooker!

Cream Cheese Kolacky

These are REALLY tasty but a bit tricky to get into proper form. I would highly recommend using flour to roll, as the recipe suggests, rather than the confectioner's sugar. I started that way and it was just too sticky. I also had trouble with the ends coming apart. Be sure to get the dough nice and thin!

Soft Chocolate Cookies

AMAZING! I added some semi-sweet chocolate chips to sweeten the deal, but I can tell the cookies would still be fabulous without them.
