Quinoa and Black Beans

Loved this. Like everyone always does, I made some modifications: I only used one can of black beans, and used a can of sweet corn instead of frozen corn. I also I used chicken broth, and olive oil instead of vege oil and vege broth. I cooked the quinoa about 10 minutes longer, because it simply wasn't ready yet. Since my husband refuses meals without meat, I added some shredded chicken as well. Superb!! I will definitely make this one again.

Brown Sugar Meatloaf

Delicious!! I followed the advice of some of the other reviewers: 1/2 cup dark brown sugar 1 egg a pack of dry onion soup mix instead of the onion No ginger 3/4 cup Italian seasoned bread crumbs instead of cracker crumbs. I added a few squirts of Worcestershire Sauce to the ketchup/sugar mix I added some of the ketchup mix on the bottom of the pan, and on the top of the meatloaf. It was SOOO good. My husband was practically licking his plate! Thanks for the recipe!

Grilled Sweet Potatoes

This turned out pretty well. I slightly changed this recipe. I peeled, then cubed the potatoes, then boiled them for appx 10 minutes, to cut back on cook time. Then I seasoned and placed in foil and grilled. The flavor was great! Mine were very soft, not sure if it was just because I boiled them, or if they were supposed to be soft. Either way, I enjoyed it, and will try again. Next time I may cook them on the stove, same seasoning, but like home fries.

Cajun Style Meatloaf

I LOVE this recipe. Thanks for sharing Bill. The only thing I do differently is for one, I spray my baking dish with cooking spray. It makes it much easier to serve and clean. I put my andouille or chorizo (which ever one is on sale) in the food processor to grind it up, then mix in a bowl with ground TURKEY and the eggs, etc. It's so yummy. One of my husband's favorites!

Cauliflower Casserole

This was delicious. This is the first time I made cauliflower, and I will recommend and make this often. I made the recipe as written, except I greased my casserole dish. My husband loved it. Thanks for the recipe!!
