Easy Batter Fruit Cobbler

I cannot believe that this only has 4 stars. Maybe a review by a pastry chef is in here somewhere; short of that level of concern for detail, I can't imagine not loving this. It was a total breeze - it took me 10 minutes to throw it together, and it was warm and yummy and just perfect. I'm not much of a baked-dessert person, but this was really impressive for how easy it is. (Oh, but I did add more fruit than it called for!)

Baked Tilapia

This was AMAZING, and so quick and easy! I do not usually like "fishy" fish (the key, though, is using fresh fish!) and this wasn't fishy at all. My husband and 3-year old also loved it. It's fine without the butter if you want to cut it out, but we like the buttery richness. What a wonderful recipe - it's now a staple for busy weeknights!

Chicken Oreganato

I'm sure the original version is good, but since I like spices more than I like chicken, I doctored it up. I added thyme, basil, pepper, kosher salt and fresh garlic. Grilled the thighs on a Foreman, too - took about 10 minutes and the chicken was very good.

Baked Slow Cooker Chicken

I used potatoes and onions instead of foil, but other than that I followed the recipe. After 8 hours my chicken was far too dry, but tasted good. I'll will try 6 hours next time.

Red Beans

This was fantastic! It's the achiote powder that makes it so special, so don't skip it. I found a recipe online for making it. I don't know the difference between that receipe and storebought achiote powder, but it added a wonderful smoky richness. Thanks so much for this!

Fennel Pork Chops

SO simple and quick and easy! I loved the flavor, but my chops were pretty dry. My pork chops are always dry, though, so I'm guessing it's me. I used vegetable broth instead of wine and about triple the fennel, and followed the timing exactly. I'll make it again but shorten the time. (Maybe "browning" does not mean what I take it to mean..)
